Hello and welcome. It's Connoisseur's Corner. I'm Jordan Rich. We
come up with some brilliant ideas for you whenever. My guest,
Mona Dog golfers here. She's the author of Satisfy and Satisfy,
two great cookbooks, among others. Let's talk about blueberry shortcake muffins. Mona.

The greate is a breakfast as is, but even better
and dessert worthy if you cut them in half and
top them with some sliced berries with a dollop of whippriam.
Doesn't that sound good? So you're going to dice three
quarter cup of blueberries, place on a paper towel, lightly
sprinkle with just a teeny bit of sugar, just to
help bring out that excess water. Cover with additional paper
towels and set aside. Then take the remaining one and

a quarter cups of blueberries and sprinkle those with a
little sugar. Cover and refrigerate to serve with the shortcakes later.
Now let's make the batter. So in a mixing bowl
you're going to whisk together. I have a cup of buttermilk,
a third of a cup of sugar, three tablespoons of
melted butter, one large egg and one teaspoon of vanilla extract,
and in a separate mixing bowl the dry ingredients. You're

going to combine one cup of flour, one and a
half teaspoons of baking powder, and one eighth teaspoons of salt.
Fold the wet ingredients into the dry to create a batter.
Fold in diced and padded dry blueberries. Use a muffin
tin with avocado oil spray and filled with the batter.
Placed in the oven at three seventy five for twenty
five minutes. And then what you're going to do When
those muffins come out great brown, You're going to serve

them sliced in half, top them with sliced strawberries and blueberries.
