Welcome to Connoisur's Corner Jr. Here continuing my conversation with
restaurant tour Bobby Wang, one of the owners of the
Kyle Lun restaurant Root Wan Saugus, celebrating seventy five years
in business not only amazing food, but an entertainment venue
as well. Bobby, let's continue our trip down memory lane
and talk about the additional ethnic Asian food choices you've
brought to all of us.

Speaker 2 (00:22):
In the eighties, we noticed that the Sesshchuan food became
very popular, general gala chicken, Sheshwan beef, things like that.
We hired a Sheshwan cook and we extended our menu
to include Sheeshwan food along with a Chinese and Polynesian fan.
Late eighties, Thai food became a big rage, so we
built out a kitchen right.

Speaker 3 (00:41):
In the middle of one about dining room, so it's
an open kitchen.

Speaker 2 (00:44):
We hired a Thai chef, a'mon who has been with
us since the late eighties, so that's quite a right
for him.

Speaker 3 (00:50):
Like we always talk about, we were young when he
first started. The next thing.

Speaker 2 (00:53):
In the nineties, we saw sushi as becoming very popular
and we decided to add sushi to the menu, and
we have a sushi bar right in front up in
one of the dining rooms and shares the kitchen with
a Tide Food so when somebody comes in, it's kind
of like a one stop shopping. You know, your kids
can have your chicken fingers, but at the same time
you can have your sushi pot tai as well.

Speaker 3 (01:13):
So it's worked out very well for us.

Speaker 2 (01:15):
They were to keep up with the times in some
ways and offer what the people want.
