In this video, I'm preparing - Cream of Carrot Soup without the Cream and without the addition of Cornstarch. The source of starch is - Potato! I usually add Sweet Potato but I was out, so I added Golden Potato.
The trick is in the taste, not only enhancing the carrot but as well the type of potato used. In this recipe, I use - Golden Idaho Potato. It gives the soup a more buttery and thick texture. Without adding butter and any thickening ingredient such as Corn Starch as well cream (dairy).
The base to any flavorful soup is the stock. I prepare my veggie stock from scratch. I will share this in another video!
Enjoy Cream of Carrot Soup without the Cream in a bowl with chunks of Garlic Bread or Sourdough or in a cup! This soup is Nutrient Dense, one cup or bowl will fill you up!
Variation - Cream of Carrot and Ginger Soup prepared in the same manner but with the addition of 1tsp. crushed or shredded Ginger. I will share a RAW version of this soup in another video!
