Easy Chicken Pot Pie (Eat one, freeze one) - Michelle

Ingredients:

2 Deep Dish Pie Shells

2 Regular Pie Shells

4 chicken breasts (can berotisserie)

2 cans veg-all

2 cans cream of chicken soup

Butter

Salt/pepper to taste (I love whitepepper)

 

Directions:

Bring pie shells out of freezerwhile you cook chicken and mix ingredients. 

Boil chicken and reserve a smallamount of broth (about ¼-1/2 a cup). 

Shred or cube chicken according toyour preference. 

Mix veg all and cream of chickensoup, add chicken in a large bowl. 

Add some broth to add moisture butdon’t make it too soupy.

Add salt and pepper.

Divide mixture between the twodeep dish pie shells.

Place pats of butter on top ofeach pie.  (Salt and pepper again ifbrave)

Place regular shells on top andcrimp the edges together.

Put 4 slits in pie.

(If you are freezing, cover withaluminum foil and place in freezer. I usually put mine in a gallon bag aswell.  Bake thawed at 375 degrees forabout 45 minutes.)

If you are baking immediately,bake at 375 for about 35-45 minutes, or until the crust to your liking.

 

Fruit Salsa - Starla

Ingredients:

1 banana

2 kiwi

1 peach

1 Granny Smith apple

1 pint strawberries

¼ cup sugar

Lime juice

cinnamon

Directions: 

Cut and chop the fruit into smallpieces

Stir in a dash of lime juice and thesugar

Add cinnamon to taste

Place in the refrigerator to chilland allow flavors to meld together.

Serve with Stacey’s cinnamon chipsor make your own cinnamon chips –

Spray four tortillas with Pam, sprinklewith cinnamon and sugar and bake.
