Wir wollen Ketchup aus einem Guss und Schokolade ohne Fettschicht obendrauf. Dafür brauchen wir Emulgatoren – die sind aber besonders wegen eines Forscherteams in Verruf geraten.
Durch Enzyme wird Obst flüssig, Pasta klebt nicht und Joghurt wird fest. Dass die Industrie Enzyme nutzt, muss sie uns nicht sagen. Enzyme sind daher die anonymen Alleskönner in unserem Essen.
In der Küche benutzen wir sie extrem selten – die Industrie ist dagegen auf sie angewiesen: Ohne Verdickungsmittel wäre die Kugel Eis nicht formstabil und der Pudding nicht cremig.
Bakterien machen aus Milch Käse und sie machen die Salami rot. Aber auch Viren werden immer beliebter in der Lebensmittelindustrie.
Lebensmittel sollen über längere Zeit farbenfroh bleiben. Denn keiner von uns möchte graue Kräuter oder eine ausgeblichene Marmelade im Schrank.
Wir brauchen Konservierungsstoffe, weil die Currysauce bis zur nächsten Saison halten soll oder weil in PET-Flaschen nun mal keine heißen Inhalte gefüllt werden können.
Aromen kommen in Fertigprodukten, aber auch in Biolebensmitteln vor. Sie sind intensiver und halten länger, können aber auch von Bakterien stammen.
Füllstoffe sind überall da drin, wo auf etwas verzichtet wird. Auf Zucker oder Fett in Light-Produkten zum Beispiel. Durch Füllstoffe müssen Händler keine kleineren Verpackungen einsetzen.
Süßstoff hat keine Kalorien, macht unser Essen aber süß - und das finden viele super.
Zucker ist Zucker ist Zucker. Auch wenn er eine der rund 70 Bezeichnungen trägt, die in den Zutatenlisten zu finden sind.
Glutamat ist nicht der Einzige, aber der Klassiker unter den Geschmacksverstärkern. Und als Botenstoff im menschlichen Hirn zu finden. Echt? Echt.
