Cut off stem, slice in half (length-wise), and scoop out seeds (which can be roasted like pumpkin seeds). Preheat oven to 400. Brush insides with olive oil, salt and pepper. Place upside down on tin foil on a baking sheet. Bake for 35-40 minutes. Once cooled, shred squash insides with a fork.
