I brought the TV cameras from a dining playboard kit
into the Burlington location when you guys opened, We had
a lot of fun that day. Well, how can you
not have fun around Peppi's pizza. It's Peppies, Frank Peppie
got God leave it to the talk packers. You know,
we were having fun here. Y on you, Bill, But
I gotta tell you years ago when there was only

Frank Peppies in New Haven, Connecticut. We brought the cameras
there years ago, and that was a previous, previous TV
show and everybody was anxiously anticipating an arrival of Frank
Peppee's here, and you finally.
Speaker 15 (26:38):
Gained twenty fifteen, that's when we opened the Chestnut Hill location.
But we just celebrated one hundred years nineteen twenty five.
It started on Worcester Street and New Haven.
Speaker 1 (26:48):
So what's your secret?
Speaker 15 (26:49):
It's the freshness of the ingredients. Everything's made in house
in the back, dough made every day, sliced whole milk, mozzarella, tomatoes,
period in the back. Peccorino romano brought in from Italy
and grated on site.
Speaker 2 (27:06):
Will you send planes to Italy just to pick up
the Yeah, comes in on a boat, you see.
Speaker 1 (27:14):
That's why it is what it is.
Speaker 15 (27:15):
Yeah, a lot of Italian ingredients, our own our own
tomatoes are grown in Italy and shipped over and like
I say, we pureeum in the back. We don't add
a lot of spices or anything to them. It's just
that flavor of the authentic ingredient, you know what I mean.
It's not super spiced out. And then it has to
be kissed with that coal fire oven that brings out
(27:39):
all those magical flavors.
Speaker 2 (27:40):
Boy, you really do know your way around a slice
of pizza.
Speaker 1 (27:44):
You guys, go visit the tomatoes in Italy. Yes we do.
We actually have question is can she come?
Speaker 15 (27:53):
That's where one of our family members is now Francis Rozselli,
the six grandchildren. It's third generation owned and they take
the trip over there to check on their crops and
their tomatoes.
Speaker 1 (28:04):
Yeah.
Speaker 15 (28:05):
It's an amazing family that I am privileged to work for.
Speaker 1 (28:09):
And it must be how many years have you worked
with the company?
Speaker 15 (28:12):
Eleven years? I started when they opened up that Chestnut
Hill location.
Speaker 2 (28:16):
Now, what is Frank Peppi's story?
Speaker 15 (28:19):
He came over an Italian immigrant. There's a massive amount
of Italian immigrants that came into that New Haven area.
He was a bread baker in New Haven on Worcester Street,
and he started out a bread baker and then he
decided to introduce something from his you know region, from
his hometown in Italy, Maori, and he started putting those
(28:42):
fresh crushed tomatoes on there with that Peccorino romano, which
is that Italian salt, and he cooked it in a
cold fire oven. And the New Haven he is the
og of New Haven that started it, and now it's
become a pizza mecca.
Speaker 2 (28:57):
But I remember when I first started hearing about, like
anytime you drove to New York or you're anywhere near Connecticut,
people would say, oh, you got to stop by Peppies Pizza.
You gotta go to Peppies. How did that notoriety happen?
I mean, there's pizza everywhere.
Speaker 15 (29:12):
We're at the crossroads in ninety five and ninety one,
and back in the day they before there was even
a bunch of food shows that there are. Now they
got this national story on their white clam pizza. Okay,
So Frank was shocking clams in his in his restaurant there,
and he decided to put the clams with a little garlic,
(29:35):
touch of oregano, that Italian salt Pecorino finished with an
olive oil dred percent olive oil. Kiss it in that
coal fire oven. So they did a national story back
in the sixties on this unique pizza, the white Clam Pizza.
And because we were at the crossroads in ninety one
and ninety five there heavily traveled from New York to Boston.

We started to become a stop and it just it
just grew, one pizza at a time. It's amazing story.
Speaker 2 (30:03):

Well, Dave, as you know, in the last ten or
fifteen years, has been a big player in the pizza
review business. And we've we've had a good relationship with
him over the years.

He gave me the highest yea, he loves your pizza. Yeah.
Speaker 15 (30:45):
In twenty fifteen, I was there the second day we
opened the Chestnut Hill location, and you're going back eleven years.
So Dave didn't have the like you know, people knew
who he was. Definitely a Boston guy, had his thing going,
but it wasn't like, boom, that's Dave Portnoy. If he
walked into a room today and the reviews were just getting,

you know, really starting to get traction. Back then he
hit us with a nine point four.
Speaker 1 (31:10):
I think we've got the review from him right here.
Everybody knows the rules one bite score, So do a pizza.

It's a nine point four strong strong I'll tell you right,
a Padillac pizza.
Speaker 2 (31:26):
Now, what were you guys thinking, because you knew of
Dave Portnoy and you knew about the pizza testing, But
what were you thinking when he took the pizza and
decided to take a bite and judge it.
Speaker 15 (31:37):
He just had a huge Boston following it at the time,
and I was aware of it. So we were like,
that's good for us, okay, But the next six months
we couldn't we didn't have an empty seat in the plage.
Speaker 2 (31:50):
And ye had. That's kind of influence.
Speaker 15 (31:54):
And he's done a lot for small businesses.
Speaker 2 (31:57):
And now the Billy and Lisa Show is bringing Frank
Pepe's Pizza and Dave Portnoy back together.
