are my meat totals. I needed mac and cheese for yeah,
mac and cheese for three hundred for three twenty, brisket
for one hundred and twenty, chicken for fifty, sausage for fifty,

beans for two twenty five, sloth for ninety five, corn
bread for one hundred and thirty, and green salad for
one hundred and thirty.

You better get that oven working for that corn bread,

So yeah, four events, an apartment party, an open house,
and two weddings and we're doing the farmer's market morning.

Yeah, No, she's not about a six thousand dollars day
roughly give her take depending on how the Farmer's Market does.
But yeah, gotta started doing trying to do some more
due diligence on my calendar because it felt like we're
missing things. Went back and looked through my went back

and looked at my event bright the people that attended,
and found two people that we booked that were not
we didn't have invoices for or we're on the calendar,
so got those on Naturally those are both on the
same day of course. So that's that's our four wedding
day while we're open roadside. I think it's four weddings.

the shop will be closed because I have I booked
our largest catering event ever. Ah, so we got that

I have another wedding that day, and then we were
invited to vend at the Luke Brian Concert in Fellerville.

sounds like you're in more trouble than I am.

So the the biggest catering event ever is two hours
at full service and then two hours we can go
home or leave. I should say they're all roughly about
the same time. M hmm. Naturally, I asked if I
could take the trailer up to because none of them

are on the trailer except for the concert. I asked
if I could take the trailer up there the night before.
They said no, because we don't pull in until the
day of. I'm like, well, can you can I just
leave it there and y'all can pull me in with
a fourk left or something. They said, no, we don't
really do that. However, So the Luke Brian Concert, the
one caveat is their fee is thirty.

Because it's a big deal. I don't know.

Yeah, well, I mean we'll raise it. Yeah. I asked
them how many people and how many food vendors. They
said they've they've they're three quarters sold out, which their
ticket capacity was twenty thousand. I means got teen thousand
tickets sold. There's ten to twelve food vendors, another barbecue

guy that travels with them. So I figure I can

My price is probably five bucks to make up for
the thirty two plus payroll and probably be okay. All right,
they don't. They don't require it, so it's thirty two
percent of nets. So and their net is minus taxes,
so whatever your gross sales is minus taxes. But it's

not like a Faster Horses event where I have to
rent their pos and can't take cash.

So you're gonna cheat them.

So is this the first time that you will have
raised prices for an event?

Yes? Yeah, yeah, so it's not it's less than Faster
Horses prices. And if anybody doesn't know, if Faster Horses
is our largest country concert, or was until they canceled
it for this year.
Speaker 4 (08:09):
Yeah. I think I had something to do with all
the sexual harassment or sexual misconduct and assault charges.
Speaker 3 (08:17):
And people dying, you know, people dying. That was a
big thing too. But there's only another one big concert
that allows food vendors, and it's in Hastings. It's a
two day event and they charge a six thousand dollars
feet and three thousand up front, which is non refundable.
Speaker 4 (08:36):
Is that the kid rock nickelback cancer? Yeah, well I
didn't even I never even looked at it.
Speaker 3 (08:44):
I looked at it because it was going to replace
faster horses for me, because I was I was going
to do faster horses because logistically it's right down the
street so I can just keep ship rolling and you know,
replenished as necessary, even though it was like thirty eight
percent to rent their people and a lot of other bullshit.
But still, this is yeah, this is I haven't sent

everything in on it yet because I really got to
get because we have a big catering event the day
before and I just announced that we're going to open
on Sundays here. I'm getting a lot of love for that.
Uh yeah, I've had a lot of stuff to a
lot of stuff to work through. Excellent, but we just

had our best month ever, So I can't be said
last month ever. Can't be sad, Josh, No, no sadness.

I have a grand baby coming and like that month.

of house stuff that needs to be done prior to

Kitchen cabinets in the basement where they are, the bottom
level where they live that are falling apart, and floresta
need to be redone. So we've got to get that done.

First of all, I just saw my my my things

So that's good. So I made my bank balances, I
got made money this week. I ended the.

Week with more money than I started success. Well, uh,
in a matter of three day, I spent fourteen thousand dollars.
It's a lot, isn't it. It was it felt like
a lot. I mean that was I mean normal expenses
were in there, you know, some food and payroll and
my little month end distribution and then a five thousand

dollars generator and yeah, it felt like a lot something
the bank account of like, oh but hey, as Chris
pointed out, he said, oh, go ahead, sorry, Christ.

locked his back up something serious the other day, and
he's been he's been working the truck with a jacked
up back all week. But yeah, so you get for
having three days off in a row.

Whoever's doing that schedule. I mean I must like him.

I've officially hit my half or the halfway point of
my last year's total sales.

You know it's pretty average. Let me get to my

to the thirty first, last week of May, we we

I don't remember anything about it really was this memor
This was was Memorial Day Monday. Right.

It's all a blur because.

I'm uh, yeah, I don't remember. So it was a
Memorial Day Monday, right, last Monday. Okay, yeah, So normally
we were not open on Tuesday, but we were. We
were requested down in Midwest. It was okay down there.
I'm a little bit less than it was. I don't
know why they insisted that we came come out that day.
Speaker 3 (15:13):
To get people to come to the office guarantee it.

Maybe they had a board meeting that day, so we
thought maybe they were going to cater and that didn't happen.
So I don't know. It was weird. And then we
did and that's all coming back to me now. We
had a family fun night at an elementary school. We
we've done the one that my kids went to the

last three years, and it's usually a pretty good, a
solid night, a lot of people there, a lot of
people eating. So we get there. They say they're expecting
about eight hundred people. It's us a ConA Ice truck
and it's supposed to be Prono pups, so corn dogs.
Speaker 3 (15:58):
Ye know, they're not corn dogs.
Speaker 4 (16:01):
They're they're making they're fucking cornducks. So uh yeah, it's
the thing starts at five. So four forty five. She
walks up. She's like, yeahs isn't coming. I said, okay,

I said, we'll serve as many people as we can.
You know, the food we have is the food we have.
And now we're thinking we're gonna get fucking hammered and slammed.
Did not happen. I mean it was fine. It was steady,
Like we still did one thousand dollars that night. I
mean it was fine or nine hundred something like that.
But so, yeah, they were so the kids all got

free tickets for ConA Ice and then they also got
tickets for pizza inside.

I mean fine if you want to that, but there's
got to be communication. Let me know that there's people
getting free pizza inside, you know. Yeah, it was we
keep getting ourselves wrapped into these freaking events were they
bring us in and then someone's given away free food. Yeah,

and a lot of them. So when the parents got
their kids their free slice of you know, hot and
ready cheese pizza, they just bought a slice while they
were in there because they were there. Because the way
that the traffic flow was, they went through all that
stuff before they got out to you know, the the
inflatables in the games and oh us. So yeah, a

lot of people said that they wish they knew we
were there before they ate crap pizza inside. But we
had a fair amount that got orders to go to
take home. So it was fine. It was I mean,
luckily we went through the majority of the food that
we had and yeah, and oh honestly, like I wasn't

in the mood to get slammed all night. Like it
was a long day already after going down to Cassopolis
and all the way back and it's like it's a
long day. So just to have a steady night that
we could still get some stuff done and what have
you was nice. Still do a pretty good sales day.
Wednesday was our rainy day. We were expecting rain pretty

much all day. They the neighborhood that we're doing we
did Wednesday. We do it once a year, like they
pick a day. They usually have a pool party at
the person's house and then you know, neighborhood can come
and swim and stuff at their house and they do
a whole thing. She actually texted me the day before
asking if we wanted to reschedule because of the eighty

five percent chance of rain. I said, this is your day.
I said, I have no other openings for you. I said,
rain doesn't bother us. We'll let everybody know what that
let everybody know that online ordering will be available. And yeah,
that was that we did. We went. Caleb worked the
truck by himself from one to twenty. Through the rest

of that there, Yep had some ANDNGI had actor's appointment
that I went to. And then just with the way
the schedules worked, I needed to grab the kids and
stuff after school and take care of them. So with
it being raining, I mean yeah, I mean really, I

had talked to Caleb beforehand to make sure he was
okay with it. And everything was fine. It was it
was an okay night. It was steadyish. I think it
had six seven hundred dollars for dinner. But lunch was
the lunch was the big surprise. We hit our normal
lunch even with the dreary, rainy weather. And you know,
that seems to be kind of the case with us.

We're doing nine hundred, fourteen dollars lunches almost every day
good and it seems to be the better our lunches,
the more disappointing our dinners are.
Speaker 3 (20:03):
All sounds like you're just started doing lunches.

Oh yeah, I mean, but yeah, I mean it's I mean,
it's not like it's disappointed. Like we'll do a fourteen
hundred dollars lunch and it's like, all right, we're going
to an awesome spot for dinner. It's typically one thousand
dollars night, and then it turns out to be a
four hundred dollars dinner. It's like, God, we didn't even
hit two thousand for the day after I'd doing a
fourteen hundred dollars lunch. So just disappointed in that regard.

But I think we're catching some bad breaks on weather
whyse and like especially like some of our bars and
stuff that are heavy patio like, it's just so cool
once we hit four or five o'clock at night that
I think, I think it's people are waiting for summer,
you know, to really hit the patios and stuff. So
and then that we.

Had a We were in ann Arbor on Thursday for ETNA,
another good day.
Speaker 4 (20:51):
There pretty low turnout for as beautiful as the day
it was, but those are so hit and miss for them,
so hopefully we don't see another drop and numbers for
next year. Friday, we did lunch only my daughter had
her open house on Friday night, which apparently not everybody
calls these things open houses. I saw a whole TikTok

about it, like it's not just a Michigan thing, but
it's like a four state thing where they're called open
houses versus just like a grad party or whatever. So
for those that are don't know that, it's just a yeah,
a graduation party, we call them open houses. So yeah,
we pulled the truck in for We did full truck

for her for her open house. Chris worked that by himself,
and then Saturday we had an off the truck open
house in the morning for fourteen for two hours, yeah,
two hours of service, and then we had to high

tail it out to Allendale for the which was a
happy little surprise. Had a really good day night there.
We did fourteen hundred I think for dinner. That's our
best best evening at trail Point we've had all year.
So yeah, and with a big late hour, so yeah,

it was good. We did a twenty eight hundred I
think for the whole day that day. And then the
biggest disappointment was yesterday at back at our Great Lakes
Insurance and Dunton. It was one of the lower turnouts
we've had there so and still did like nine hundred.
But it's been pretty typical fourteen thirteen, fourteen somewhere in
that area. So but again, after the week that we

had it was kind of crazy. It was nice that,
you know, everybody kind of got to just get back
to normal and get some stuff cleaned on the trailer
and get it back to good shape. So we do
have a closing checklist on board. Now that's a dry
race and that they get to initial it seems to
be helping a lot with making sure everything get done
before they leave. So that's going well. But yeah, overall

a pretty decent week, you know, twelve five, which means
we finished the month. Excuse me? Uh at if you
include the catering that got paid early, which was only
like five hundred bucks, we ended up at seventy four
thousand and four hundred.

that were just slow. I mean, which you're in half.
I mean, if you're hitting every single day. If I
let's see, let's look back, Let's see, there's probably another
three grand there, like those slower dinners if they would
have been where they normally are. You know, yeah, we're

probably we probably could have. I don't think there's eighty there,
you know, with what we had on catering, but yeah,
there's always more catering that is potential that I'm sure
there was stuff in May that we didn't book, you know,
that we the jobs, we didn't get in stuff. So
but yeah, really solid month June schedule. We did sixty

last June or like fifteen eight or something like that.
Chris asked if if I thought we could do another
seventy four in June. So honestly, I looked at last
June schedule and I don't know how we did sixty.
So because there wasn't a ton of I mean, we
had four at in the days that were all smaller

at in the days. Like outside of that, we weren't
doing a ton of catering on the weekends and stuff.
We had some. But I think we talked about it
last year that like my open house calendar and spring
wedding calendar felt pretty late last year and it's really
picked up this year, so maybe I don't Maybe we

can do another seventy in June. Yeah, it'd be awesome.

We have a very strong, very strong June planned. Yeah,
very strong.

I mean yeah. Our calendar looks stupid and it gives
me anxiety looking at it every time. Like the next
three Saturdays are our Saturdays. I mean they're crazy, so yeah, yeah,
I guess, I guess. Yeah, like I we have, like

we already went through this Saturday for me. Next Saturday
we have four open houses. Nope, three open houses. Three
open houses, and we're open all day on the truck.
The following Saturday after that, we have an open house
and we're at the Grand Rap at the Pride Festival
all day. We got our Jackson pridefastal, which we were

actually supposed to be there Saturday and Sunday. I'm pretty
sure I'm not getting a refund on my Sunday, which
is fine because I had to cancel on them, but
I missed a wedding on that Sunday, So we have
a wedding in an open house that that Sunday. And
then finally on the twentieth of June, we get a
break in our craziness and we're just open at the

campground for a very nice, relaxing Sunday of eleven to six.
Speaker 3 (27:46):
And is that Tyler's Creek.
Speaker 4 (27:49):
Yeah, Tyler Creek. We're really at the best. We're going
to do a four hundred dollars hour in that stretch,
you know, and the restaurant we're going to be, you know,
one hundred and fifty two hundred dollars hours, very relaxed,
very easygoing.

Bring your bring your clubs to a quick nine.

I won't be going out there probably I have staff,
hopefully by that point I'm not. I'm back to my
normal a day a week on the truck. I did
hire somebody else, Oh, soft hired somebody else. My daughter's
friend who also graduated. But she's not going away away
to college. She'll be going to g RCC in the fall,

so we just need her trains.

You may stay for a little while.

Yeah. I lose Alex in August because she's moving day
from Michigan State.

So absolutely congratulations to her.

Yeah. So yeah, June looks. June looks. Yeah. There's definitely
a couple of big weekends in there, and the rest
of the rest of the days are all solid days.
We have a handful of caterings. I mean, besides that
every Thursday, we have a few other catered jobs during

the week, so on weekdays. But yeah, it should be
a good day, it should be a good month. We
had talked about we had talked about five hundred this
year as being like the crazy goal, and I don't

I just don't know if that's a doable, realistic goal.
So we'll see. Because what I did four to fifteen,
let's say four to fifteen last year, so that's eighty
five thousand dollars more than last year. We're open eight
months out of the year, so we have to do
better than ten thousand dollars every month, which we already

haven't hit for April, at May or April and half
of March. So you know, it's like, but we'll do
what we can. I mean, we're not going to not try.
But July needs to be good, August and I mean,
like all those wrestlers ones need to be popping. So yeah,

we essentially have to do seventy in June, and I
don't know that's there. I don't know that that's there.
We'll see. I didn't I didn't think seventy five was
a possibility either.

So for you having the good lunches, you'll be fine.
You just need to pick up the dinners, that's all. Yeah,
you need to do what twelve thousand a week, fifteen
thousand a week.

the vendor the Luke Brown concert. That was I mean,
it was a big deal. I mean I'm like, seriously,
why else kind of thing?

And right as that time, I hear a fump and
then I see sparks coming out of the back of
my truck. I'm like, oh shit. So I pull over.
And I thought I popped a tire or something like.
I thought I just just tire because I saw sparks.
So look, I pull over. I got a buddy on

the phone and I said, hey, hold on a second,

and I'll send you a new kit that you can

put on. You just mailed the other one back and
I said, wow, I don't really have the tools to
put this on, Like how about this. Can I go
back to the place that I bought up from that
installed it, and like, can you work with them on
the warranty. They're like well, well, they're like not exactly.

So I'm like, well, all right, send me what you
need and in an email and then I'll figure it out.
So I called the company that or the shop that
installed it. They pulled it up and they're like, yeah,
I gotta, I gotta, I got one in stock. And
I said, well, I'll tell you what. They're gonna send
me a new kid. What if I just give them
your address and you can just do the warranty work.

He's like yeah, that's fine, Yeah, that's fine. When when
you get the new kid, just bring it back like no,
I'm gonna have him ship it to you. We're good.
It's like, oh yeah, that's fine too, Like, first of all,
where do you find a trusting place. It's like just
gonna say, hey, I know you look away, but yeah,
feel free to just just drop that off whenever you

get it. We'll just be out of kid. Yeah right,
So I'm gonna get that fixed tomorrow at nine am.
But on the same day we booked that catering gig,
and it's like good things happen and then bad things happen.
Like oh yeah, so this catering gig is for two

hundred adults and one hundred kids.

Three people, got it?

Yep? Uh, one hundred kids each get an individual kids meal,
hot dog and mac and cheese. So we're gonna have
a three person buffet. One person's gonna deal with the
hot dogs and mac and cheeks for the kids.

Gonna deal with the the adults. Two meets two meets
four sides. You're handling that with two people. We're handled
that with three people.

That is just for the adults. That's for two people. Yes,
So we're gonna have somebody do meats and somebody do
sides or somebody probably I think they wanted two cold sides.
So I'll have like, I'll have it split. We'll do
like a six six top buffet and we'll just replenish unnecessary.
But that's the that's the thought. Whether that happens, are

now I have three people including myself, that know how
to make and plate all the food. So if I
just want to be a runner between shop and food
truck a day, I can. If I just want to

We just said we're going to be open Sunday posted
