with his family. They do their homework there, they help
them out. Just a fantastic little place.

So when you're a chef and you go to a restaurant,

I'm really big into souve as well, So it depends
on the day. I like cooking seafood, just pretty much anything.
I'm classically French trains, like I lean towards that a lot.

Yeah, okay, how did you become a classically French train
did you have?

Did you have to go to France? Did you go
to school here?

Well? My mentor was classically French trained, so he started
my training and then I decided to go to school
after a couple of years of being in an industry,
and it was a locord on blue programs, the French
a French program. Yeah, learned more from my mentor than
I did from school.

But you know whatever, I had a friend that was
French training and then so like he was, he was
doing it, he was making all this French food and
uh it turned out that there was a rat in
his chef hat that was controlling his body. Found out
as a fraud.

I was going to that school anything like the TV
show The Bear? You know, did you ever watch The Bear?

first started was very similar to that. Yeah, I had
things thrown at me and I was doing my job. Nowadays,

Oh I sometimes if I get to that point, somebody's

say no, no, no, we try to keep it even
keeled back here.

is like a two week process to actually make bacon.

pork belly and the mixture for at least a week,
and it's letting it dry out to form a pellicule,
so when you smoke it, the smoke will actually adhere

It's after you you pull the the bacon out of
the the the brine. Essentially, you rinse it off and
you let it sit in a cooler, uncovered, and what
it does is it dries the surface off and it'll
get sticky, kind of tacky. So that's what lets the
smoke adhere to that and.

it makes magic.

was going to be there and like be part of

have her. I met her a long time ago when

Met she first came on and he couldn't be that was.

she was talking about it, and I was like, okay, cool.

Yeah, for the most part, Well, I had a couple
of different things in mind, and then I was really
just trying to think of how can I incorporate other people.
I thought about different things I could do just with
Tiffany at first, and then I was like wait a minute.
And then when I found out that Jim Colbert was coming,
I was like, oh no, this is a definite. That
was one of my options. And then I went full

force with it.

So, uh, you'r We did all of our assessments the
other day, was it yesterday?

Did you have a good time, what was your what

really weird. It was a tip jar. It had like
navajo feathers on it and a baby's foot and a

But it was a bigger one. It was a much

But but the the other thing is like like a
guy came up to him and he said, man, you
need to put instead of a dollar because I have
a tape dollar bill on there. Uh, And he said,
you need to put a bigger like a twenty or
something like that. But the time, the only time I
ever did that, I put a one hundred dollar bill
on there because I was playing it like he throw
and people thought, oh man, this guy's too expensive to
tip here.

I think having a dollar is good because if I

And Amber's like, well, people were getting there, were they
were revolted. That's part of shock that you're supposed to

it was twenty years ago.

And yeah, I mean we back in the day, we
had one guy that was on the I'm sure you know,
but he got on roller skates and he tethered a
rope to his testicles and had a guy on a
lark pull him and he fell down and they pulled
and it stretched it out this much.
