you guys use sand Marzano tomatoes. They're a special tomato.
They're grown they have to be grown in a special place.

That's mostly correct. So what you see at Whole Foods
is a liar tomato. It's either Spain, China, it's it
is not a certified DOP. Here's a weird thing about
certified DOP. I'll try and condense this. In America, you

We know exactly who's bringing them into Miami, which family
they get get it from, where that farm is.

they solve it to this distributor. It's authenticated and it
does not have the DOP marker on it. And that's

The dessert cart is a genius play if the goal
is to sell more, right, So are you a high
end restaurant if you have it or not? If it's
if the dessert is high end, great, I've seen that
at Michelin star rated restaurants in New York and Vegas.
So if you can, you could still be at the

high end. It's a sales tactic too, because people eat

business and you have no exposure, people know what the
Andelin's food truck is. I'm not a you know, trying
to be cocky, but it's not like something where all, oh,
this is going to move the needle being at the

So it's also a matter of I need to make
sure that the truck team, which gets bonus based upon profit,
is going to profitable events. And then in terms of
well you should do something for the community, that's what
we do. We do tons of stuff for the community.
And then we need to have stable business practices. So
we've learned which events make money. Usually bars at night
make money. There's a lot of events that you think

are going to make money and they make nothing because
let's say we go outside the be Okay, people are
going inside the be Okay to eat. They're not going
after the event. They've already eaten. So it's not like
the best event and we would have thought that otherwise.
It's just you live and you learn in terms of
hey will you do this for us. We look at
the quality of the donation of what they're looking to do.
If they're helping like orphans or you know, the homeless,

we're much more inclined to you're helping my you know,
paintball league, which we've been hit up about many times.

But sometimes restaurants feel guilty and feel like they have
to when someone throws the you should help out the
community card.

It's a very odd situation how much restaurants are hit up.
Like no one's walking up to Bokay Tower and saying, hey,
donate to my kids softball league. Well, they're a you know,
a fortune five hundred traded company. People hit up their
local restaurant. Now I look at that as an opportunity
