Have you ever thought about the farm-to-table movement, not just back to the land, but looking at what's-for-dinner, literally, in the eye?Did you take a course in high school entitled The proper way to eat a pig, where you learned to butcher a real pig, the right way?Maybe not, unless you attended Portland's Oregon Episcopal School and had the unique opportunity to experience dismembering a pig, under the watchful eye of Camas Davis of the Portland Meat Collective.She is at the fore-front of the farm-to-table movement, not just back to the land, but looking at what's-for-dinner, literally, in the eye.Davis, who has taught butchery to mothers and young professionals, to beer brewers and bike messengers, but never to high schoolers, devised a weeklong curriculum that covered the basics.This included a field trip on a Friday, when she took the students to a local farm to meet and select a pig, whom they named Wilbur and then, realizing she was female, renamed Wilburess.
