QUARANTINE COOKBOOK: PERFECT STEAK

PERFECT STEAK

Ingredients:

1” thick NY Strip steak (or your favorite cut)

5 cloves of garlic

4 sprigs of rosemary

1/2 stick of butter (cut in two)

Salt

Pepper

Foil

Recipe:

-Pat steak dry with paper towel, then liberally salt and pepper both sides.

-Put a shallow pan on Medium-High heat

-Add butter (1/4 stick), garlic, and rosemary to pan, and stir until fragrant

-Add Steak to the pan, and begin basting the steak with butter using a metal spoon

-Add the remaining butter (1/4 stick) to pan and continue basting.

-Flip over steak after 3 minutes (this time may be different on your stovetop — 3 minutes on each side, on my stove, makes medium-rare)

-Continue basting the steak with butter ... NEVER... STOP... BASTING.

-After 3 minutes of continuous basting, remove steak from pan, place on a plate with garlic and rosemary (from the pan), and cover with foil.

-Let the steak rest for 6 minutes under the foil.

-Open foil, cut steak on a bias, against the grain, sprinkle with salt, and serve with garlic and rosemary as garnish.
