Red Lobster’s newest “ghost kitchen” is coming to Chicago’s South Loop.

The new ghost kitchen is at 2537 S. Wabash Ave.

Red Lobster is building on an industry trend that allows for growth while maintaining a “touches off-premise experience” during the COVID-19 pandemic.

The ghost kitchen also opens at a time that indoor dining is prohibited, per Gov. J.B. Pritzker’s “resurgence mitigation” efforts in the region in response to the rising number of COVID-19 hospitalizations and positivity rates.

Red Lobster partners with third-party delivery partners — Grubhub, DoorDash, Uber Eats and Postmates, to name a few — to run the ghost kitchen. Delivery isn’t available to customers on the restaurant’s website, according to Restaurant News.

“We are thrilled to open our first ghost kitchen in the great city of Chicago. It will enable us to reach new guests who are not currently served by our existing brick-and-mortar restaurants,” Red Lobster CEO Kim Lopdrup said. “Off-premise is a huge priority for Red Lobster. We tripled our off-premise sales in the two years before COVID-19 began, and we’ve tripled them again over the last eight months. Opening a ghost kitchen is a natural next step in expanding our off-premise business. It will allow us to reach new customers who want great seafood with a touchless off-premise experience.”
