Every state has its quirks and specialties, especially when it comes to food. People flock to Illinois for Chicago deep-dish pizza, New York has their own bagels and Texas barbecue is on a whole other level.

Washington is known for many different ingredients and local specialties, from Rainier cherries to fish and chips and local restaurant faves. So what's the defining food for the Evergreen State?

People from outside the Pacific Northwest probably haven't heard of this strange creature. Despite its name, it's actually a clam that can grow up to three feet in length and football-sized proportions, Eater says. Chefs like to whip the meat of this bivalve into a chowder or stir-fry, sometimes.

This is what Stacker had to say about the delectable crustacean:

"Washington’s unique geoducks are giant clams. They are dug from deep in the sand of the Puget Sound and weigh up to 10 pounds. The briny delicacy is often served raw and thinly sliced with soy sauce and lemon."
