APPLE PIE SPICE FRUIT LEATHER/ROLLUPS

Ingredients

8 cups peeled, or not, chopped apples

1 cup water, cider or apple juice

Apple spice or cinnamon to taste - start with 1-2 teaspoons (optional but good)

Sugar or honey or preferred sweetener to taste - start with 4 tablespoons and go from there (again, optional)

Instructions

Wash, peel, and chop apples and place them in a saucepan. Add 1/2 cup water and bring to a simmer. Cover and cook about 10 minutes or until soft.

Add granulated sugar and cinnamon and mash. Cook 2-3 more minutes on low heat, stirring occasionally.

Place mixture in a food mill, food processor or blender and process until smooth. Pour onto 2 large baking sheets lined with foil and sprayed. Spread with a spatula into a fairly thin layer, making the sides a bit thicker since they dry out first. Bang the pan on the counter a few times to make sure the mixture is evenly distributed.

Bake at 170 degrees 2-3 hours or, checking every 20-30 minutes, until it's tacky but doesn't stick to your finger. You can also dehydrate in dehydrator, following temperature instructions for fruit leather.

Cool and cut into strips. Roll up. I store them rolled up in parchment.

Keeps a couple weeks on the counter, in a covered container, or in refrigerator up to a month or so. Freeze up to 3 months.
