RECIPES:
MEXICAN MEATBALL SOUP – I saw this recipe and wasn’t sure how it would come out, but everyone loved it! In a large pot, add oil and chopped onion, chopped carrots, chopped jalapeno and celery. Once everything is soft, add in garlic, cook for 30 seconds or so then add in a couple cans of fire roasted tomatoes, beef broth and tomato soup, and a can of tomato paste. Season with salt, pepper, crushed red pepper, parsley, cilantro, oregano. Add chopped potatoes and continue to simmer. For the meatballs: mix ground beef, oregano, cumin, salt, pepper, garlic and onion powder, chopped fresh cilantro, an egg, and raw white rice. Form your meatballs and add to the simmering soup. I let the meatballs cook on low in the soup for over an hour before we ate.I also added chopped zucchini. You can add any veggies you like corn, peppers (for jeff’s sake), etc.
HOT HONEY MAPLE CHICKEN AND WAFFLE SANDWICH– This is always a favorite. For your chicken, pound out your chicken breast and let it sit in butter milk. In a bowl, mix corn starch and flour, garlic and onion powder, salt and pepper and paprika.Dip your chicken in the flour mixture and then fry on each side until crispy. Toast your frozen waffles, mix hot honey with maple syrup (I used bourbon maple syrup from my friend’s at Maple Saint in Deerfield). Drizzle the syrup on the waffles, and on your chicken then top with a slice of cheddar cheese, put under the broiler until the cheese is melted, and top with another waffle.
HOMEMADE POP TARTS – Roll out pie dough and cut into three rectangle strips. In a bowl, I mixed strawberry preserves, strawberry jam and cornstarch. Spoon some of the mixture on to the strip and fold the top over it and brush some egg over the edges and seal with a fork all the way around. Bake at 400 for 15 minutes until golden. For your icing mix more of your jam with powdered sugar and some heavy cream and then spread some on top of your pop tart.
