RECIPES:

PASTA PRIMAVERA – Tons of veggies mixed with pasta, delicious! Start by making a lemon butter, by smashing garlic with salt and then in add in soft butter and lemon zest.  In a large pot minced shallot and cook in oil until soft and then add in hot water and pasta and cook and bring to a boil, cooking your penne pasta to al dente. Keep the remaining pasta water and add in chopped asparagus, zucchini, carrots, bell pepper, broccoli, sugar snap peas, frozen peas (or any other vegetables you like), once vegetables are soft, add in cherub tomatoes and add in your lemon butter, grated parmesan cheese, crushed red pepper and mix all together to cover all the pasta, add in fresh chopped basil and top with more grated parm cheese.

ITALIAN SQUARES – Haven’t made these in a while, but still a favorite! Unroll crescent roll sheets (if you couldn’t find the sheets, then just seal up all the perforations to create a sheet) on to a greased cookie sheet, and then layer hot ham, salami, pepperoni, prosciutto and then top with sliced pepperoni, sprinkle on Italian seasoning, provolone, top with another crescent roll sheet and seal each side of the dough. In a bowl mix warm butter with garlic powder and Italian seasoning and then brush on top of the dough. Bake at 375 for about 10 minutes or until golden. Let cool before cutting into squares. Sprinkle on grated parm cheese before serving.
