RECIPES:
SQUASH CASSEROLE – In a large pot heat butter, chopped onions and sliced summer squash and zucchini and season with salt and pepper and then add in some garlic and cook for 15 minutes or so then remove from the pot and chop and set aside. In the same pot put in a can of cream of mushroom soup, some milk, grated cheddar cheese and combine until melted and then stir in a beaten egg and then add in your squash that was set aside. Move the mixture to a buttered casserole dish. In a bowl mix melted butter with crumbled ritz crackers and then put on top of your casserole and then bake for 35 minutes at 350.
FRIED PICKLES – If you have a fry daddy this works great, if not heat your oil in a saucepan.In a bowl, mix flour, cornstarch, cornmeal, baking soda and salt and then add some club soda and mix. Take your pickle spears and pat off some of the juice and then dip into your batter mixture and then put in the fryer (or saucepan) and cook for 5 minutes or until golden. Serve with sauce: Mix mayonnaise, buttermilk, minced fresh chives, minced shallots and garlic powder, salt and pepper and some sriracha if you like a little spice.
