RECIPES:
SHRIMP SUMMER BOWLS – In a bowl mix sugar, hot water, and thinly sliced chile pepper, lime juice and fish sauce and set aside. In another bowl mix, hoisin sauce, peanut butter, rice vinegar, chili garlic paste and set aside. In a pot melt sugar, with rice vinegar, salt and water and once sugar is dissolved add peeled, deveined shrimp for 3 minutes or until cooked and pink and then set aside. Drain water, and in same pot add water and salt and cook rice noodles until al dente, drain and rinse in cold water. Move noodles to a bowl add some of the first sauce you made (sugar/lime juice sauce). In another bowl add thinly slide carrot strips, thinly sliced cucumber sticks, and thinly sliced romaine lettuce and mix with the rest of the sugar/lime juice sauce. Put some noodles in a bowl add some salad mixture on top and the top with shrimp, avocado slices, fresh basil, cilantro and mint and peanuts and then serve with peanut sauce.
MEXICAN STREET CORN CHICKEN – In a bowl mix flour with salt and pepper. Pat boneless chicken breasts dry and coat with flour mixture and cook in a skillet in olive oil until golden on each side and then remove from skillet. In the same skillet, add more olive oil, and add chopped shallots until soft and then add in corn, chopped red bell pepper, and then add in a can of tomato paste and mix. Then add garlic and chili powder, cumin, oregano, paprika. Pour in tequila quickly steam and scrape the bits off bottom and then turn on low and add in chicken broth, add in crème fraiche, salt and pepper and stir until the liquid reduces and thickens.Add the chicken back to the skillet and then put it in the oven and cook for about 15 minutes or until chicken is cooked through. Crumble queso fresco on top, squeeze fresh lime juice and chopped cilantro on top.
