RECIPES:

SEAFOOD AND VEGGIES – I was craving seafood, and I love summer veggies so I created this one over the weekend. On the Blackstone griddle (you can use a cast iron pan inside if you want) and put on some garlic butter and add sliced zucchini and summers squash and season with camp mix and onion powder, then I added scallops, and shelled, deveined shrimp, and a cod loin all seasoned with camp mix. In a bowl I mixed crushed ritz crackers with melted butter and parmesan cheese. When the veggies and seafood was almost done, I topped it with my ritz mixture and mixed all together and when golden removed and served.

LEMON CHICKEN – Thinly slice half of a lemon and set aside other half. Slice chicken breast in half and pound out until thin and season each side with salt and pepper. Set up a bowl with flour, set up a bowl with eggs, milk and salt beaten. Heat up a skillet with olive oil, coat your chicken in flour and then egg mixture and then into the skillet. Cook chicken until golden brown on each side and remove and set aside. Wipe out your skillet, and put in your lemon slices and cook until golden for a few seconds and then add in chopped shallots and butter and cook until shallots are soft and then add in some flour to coat and then add in white wine, chicken broth and let simmer until the sauce thickens then squeeze in lemon juice from the other half of lemon, more butter, salt and pepper. Then add chicken and lemon slices top with fresh chopped parsley and serve on mashed potatoes or on top of pasta.
