RECIPES:

MEXICAN RICE BOWL – After visiting the Friendly Toast and having an amazing rice bowl, I decided to make my own at home. I started by pickling some veggies. I got a bag of slaw mix (red, green cabbage and carrots), then thinly sliced red onion, thinly sliced jalapenos. In a small pot, I did ¼ cup rice vinegar, ¼ white vinegar, ½ cup sugar, mustard seeds, salt, pepper, celery seed, once the sugar is melted then pour this over your veggies. Put in the fridge. For the bowl, I cooked Goya Chicken Rice, added in black beans, set aside.I sliced chicken breast into thin strips and then seasoned with a mix of paprika, chili powder, cumin, garlic and onion powder and camp mix, coat with oil and then cooked the chicken on the Blackstone with chopped zucchini and summer squash. While that was cooking, I grilled a red pepper and corn on the cob until cooked on all sides. Once everything is cooked, assemble your bowls.Rice and beans, top with chicken, corn off the cob, chopped red peppers, summer squash, zucchini, Pico de Gallo or Mitchell’s Fresh Salsa, fresh chopped cilantro, top with your pickled slaw and drizzle with a Cilantro Lime Dressing (I get it at Aldi and it’s so good).

SHEET PAN VEGGIES – It’s summer and I love my veggies! Cut summer squash, zucchini, eggplant, thinly sliced red onion and garlic, on a cookie sheet put all your vegetables and garlic and coat with olive oil and season with salt and pepper and crushed red pepper flakes. Roast vegetables at 425 for 45 minutes. Chop fresh basil and parsley and sprinkle on top, season with more salt and pepper, top with fresh mozzarella pearls and drizzle with more olive oil and drizzle with balsamic glaze.
