RECIPES:

ZUCCHINI AND CORN ENCHILADAS – Use up your summer veggies! In a skillet, heat oil, add chopped shallots, chopped zucchini (and summer squash if you want too) and black beans, corn (off the cob if you have it) and season it all with cumin, chili powder, garlic and onion powder, salt and cook until softened and then add in some shredded Mexican cheese, on a tortilla spoon your veggie mixture, then use a little bit of refried beans to seal the tortilla when rolling up. Place your rolled tortillas in a greased baking dish and once all rolled up, pour enchilada sauce on top off all of them and then top with more shredded Mexican cheese and bake for 20 minutes at 425 until golden.

GREEK CHICKEN MEATBALLS - In a bowl, mix minced garlic, whisked egg, minced onion, breadcrumbs, oregano, chopped fresh mint and salt and then add in ground chicken and mix with your hands until combined and form into balls and then place on sprayed baking sheet and cook for 15-20 minutes at 350 or until done. For your sauce: Mix Plain Greek yogurt, fresh chopped parsley, fresh chopped dill, minced garlic, grated cucumbers (all water squeezed out) and lemon juice. Crumble feta over your meatballs when done and serve with your dipping sauce.
