RECIPES:
TURKEY DINNER STUFFED POTATO SKINS – Wash russet potatoes, and then coat with olive oil, salt and pepper and bake for an hour or soft through at 400 degrees. I couldn’t find turkey breast, so I used turkey thighs, and I prefer the dark meat anyways. You can use leftover turkey too. I seasoned the turkey thighs and baked and then deboned and took all the meat off and chopped. Cut the potatoes length wise and scoop out most of the potatoes and chop into small chunks. Make box stuffing (or use leftovers if you are doing this after Thanksgiving). In a large bowl, combine, your potatoes, turkey and stuffing and then top with a turkey gravy and fresh thyme, pepper and I like to use poultry seasoning. Then spoon this mixture into the potato skins, top with white sharp cheddar cheese and bake until melted and hot. For the spicy cranberry drizzle: in a saucepan, whole cranberries in jelly, orange juice, brown sugar, cinnamon stick, crushed red pepper and hot honey and let it cook down.If you want it to be thicker you can add some cornstarch. Once your potatoes are done, drizzle with the spicy cranberry sauce.
TUNA CASSEROLE – Cook egg noodles and set aside. Mix 2 cans of cream of mushroom soup with a little of the water leftover from cooking noodles. Cook some chopped onion and chopped celery with salt and pepper until soft and then add in frozen peas and cook until all veggies are soft and then add canned white tuna, sharp cheddar cheese and then mix with your soup mix and noodles all in a greased casserole dish, on top add potato chips and bake for 10 minutes until golden.
