One of the most simple, and yummy, Halloween treats.

MONSTER MASH

2 (20.5 oz) cans refried black beans

1 (10 oz) can drained tomatoes and green chiles

1 tablespoon taco seasoning or more to taste

1 pound shredded cheese - Paula uses Colby-Jack cheese (4 cups)

Tortilla chips or Scoops for serving

OPTIONAL BUT GOOD: Sliced jalapenos for garnish

Directions

Preheat the oven to 325 °F. Spray a 2-quart baking dish.

In a medium bowl, combine all of the ingredients except 2 cups/8 oz of cheese for topping. Spoon the mixture into the prepared baking dish.

Bake until hot and bubbly, about 25 to 30 minutes. Remove the dish from the oven and top with the remaining cheese. Bake until the cheese is melted. Serve with tortilla chip
