My Weekend: Brews n Boos, Daisy's World, and Stuffed Pumpkin (recipe!)

I could sit here and try to explain how cool the halloween party was - but why do that when I can just show you?

And check this- one guy went as ME!

We all had a lot of fun and thanks to everybody who came out to have it with us! The costumes were top shelf!!!

I'm still kind of recovering from the Ireland trip and I haven't even had time to go through all the photos I took (1700)! I'll share the pics and videos in the near future though, I promise. It was an amazing trip and the one thing I will say is that the group of listeners was awesome to travel and hang with! Here's the group shot taken at the top of the Ring of Kerry -

The only other thing we did on Sunday was to head out to Butternut Farm (our local family farm) and pick up a pumpkin!

And you know what that means?

Stuffed pumpkin for dinner on Monday night! And if you're asking what that is - you must have missed my mom's favorite recipe - Connie's Stuffed Pumpkin recipe! So- I'm resharing it (it's been downloaded over 5000 times so far)-

CONNIES STUFFED PUMPKIN RECIPE]

Here you go -  its Greg’s Moms recipe for stuffed pumpkin.  It’s a tradition at our house-

And its delicious.  Here it is – 

1      12”  to 15” pumpkin

2      2 to 3 lbs of ground pork   (Note: you can make it  ½ ground pork, and ½ ground beef if you like.  The flavor will not be changed that much.  Your preference)

1 medium onion,  chopped

5-6 medium sized potatoes,  peeled, and cut in small pieces

1 tsp. of cinnamon

1 tsp clove

1 tsp allspice

Cut  out the top of the pumpkin as you would for a jack-o-lantern  (make a square, with the stem in the center- it will serve as your handle).  Clean out the center of the pumpkin,  removing all the seeds and innards.  Set aside.

Cook the ground pork with chopped onions.

Drain most of the liquid when done,. And set aside.

Cook (boil) potatoes,  then mash with a fork and add to the meat.  (don’t whip them, just chop them up pretty good)

Add spices

Mix well and heat mixture for about ½ hr on low heat.

Add mixture to the inside of the pumpkin,  and place pumpkin top on.

Place pumpkin in a pan with about 1 inch of water,  covering the bottom of the pan.

Place in 375 degree oven for about 2 hours (until you can easily pierce the pumpkin side with a fork)

Be sure to add water when necessary – so that theres always moisture in the bottom of pan.

When done-  take it out of the oven and serve.  Scoop filling on to a plate- and remember- the inside of the pumpkin is like a squash- so scrape some of that into your plate as well.

And last but not least- while we were away, Daisy was boarded by our friend Jacqui at K 9 to 5 in Dover, and she does an awesome job! As usual though- when you return from being away- pets sometimes give you the cold shoulder for a bit. This might be an example -

Watched the Patriots blow out Cleveland - which didn't look like a blow out early on - but still - they got it done! That made the afternoon much more bearable!
