RECIPES:
FRENCH ONION SOUP BOMBS – I think I found this one on Delish and they are so tasty! I couldn’t find ciabatta rolls at Market Basket . . .sold out so I had to adjust, and I think they worked great! I used mini-Portuguese rolls. For the onion mixture, I used Vidalia, Spanish and red onions and sliced and cooked in butter with salt and pepper and fresh thyme for an hour on low until they got very soft, then added some sugar to caramelize them, then coated with flour, and then added in red wine and cooked down, then added in beef broth. Cut the top off of your rolls and scoop out the bread, put a half slice of Swiss cheese in the roll and bake until melted, pull out of the oven, add your onion mixture and then top with shredded gruyere cheese and put back in the oven and broil until melted and bubbly.
CHORIZO STUFFED DATES WRAPPED IN BACON IN ROASTED RED PEPPER SAUCE – I know I have made these before but in case you missed it the first time, try these! They are so delicious!In a bowl mix chorizo sausage with some queso fresco cheese, cut a slit and pit dates, stuff the date with the chorizo sausage, wrap each one in bacon (cut the bacon in half and in half the long way) and bake at 350 for 20 minutes, broil for the last few minutes to get the bacon crispy. For your pepper sauce, in oil, cook minced garlic for a minute, then add in diced tomatoes in oregano and basil, tomato paste, chopped roasted red peppers, and all the juice from the jars of pepper, chopped cilantro, chopped basil, salt, pepper, small jar of red pesto sauce, crushed red pepper. Cook down and then use immersion blender to make smooth. Serve the dates on top of the sauce, crumble up more queso fresco cheese, and more fresh cilantro when serving.
