RECIPES:
STUFFED PEPPER CASSEROLE – I love stuffed peppers, stuffed pepper soup and now this casserole. In a pan cook chopped onion, chopped red pepper and chopped green pepper until soft. Add ground beef and season with salt and pepper and cook until brown and then add minced garlic, a can of tomato paste, cumin, paprika, more salt and pepper to taste and chopped plum tomatoes and chopped zucchini and cook until soft. Add beef broth, brown rice (or you can use white), chopped parsley, Worcestershire sauce, mix and move into a baking dish, top with cheddar jack cheese and bake with aluminum foil for an hour or until the rice is cooked through. Remove foil and broil for a few minutes until the cheese is bubbly and golden.
SHRIMP AND GRITS – In a pot boil chicken stock and slowly stir in the grits and boil for 5 minutes and then turn heat to low, add in butter, grated sharp cheddar, pepper jack, soft mascarpone cheese and season with salt and pepper. In another pan, heat more chicken stock. In a skillet, cook deveined shelled shrimp that has been seasoned with Spicy Old Bay seasoning in butter and oil for a minute on each side and set aside. In the same skillet cook chopped bacon, chopped onion, chopped red bell pepper, chopped jalapeno and season with salt and pepper and cook until soft and add tomato paste, and the hot chicken stock. Cook to taste and then add your shrimp back in and squeeze in some lemon juice and salt and pepper and then serve it over your grits and add chopped scallions.
