RECIPES:

LEMON BUTTER SHRIMP ORZO – In a skillet, melt butter and cook that has been seasoned with Old Bay Seasoning (I use the spicy seasoning) and once cooked a minute on each side or cooked through and set aside. In the same skillet, add more butter and cook chopped shallots and once soft, add in garlic, crushed red pepper and cook for another 45 seconds and then add in some white wine stirring and scraping the pan and cook until wine is almost evaporated and then add in vegetable broth and bring to a boil, stir in orzo and boil again. Turn down heat and let simmer until cooked through and broth is absorbed. Once cooked through, add in heavy cream and mix until sauce is thickened and then add in your shrimp, stir in lemon juice, lemon zest and season with salt and pepper and top with fresh chopped parsley.

LEMON BLUEBERRY BRIE BITES – In a bowl mix some sugar and lemon zest and then toss blueberries in it and set aside. Grease a mini muffin pan and roll out crescent dough sheets and cut into squares and press into the mini muffin pans, but brie into small pieces and put into each crescent roll and then top with your blueberry mixture and then top with chopped salted almonds. Bake at 375 for about 15 minutes or until dough is golden. Drizzle with honey and grated lemon zest.
