Hello, and welcome to Connoisseur's Corner. This is Jordan Rich.
Always a pleasure to highlight local restaurants doing great things,
such as Florenza Cafe and East Boston, a family owned
Italian eatery known for its Roman style pizzas. Joining me
is Stefano Bruno, the owner with a brief overview Florenza.

We specialize it in Roman style pizza, artisan Panini's. We
have eighteen flavors of gelato, that amazing espresso bar with
fresh coffee.

Stefano, let's talk about the pizza and what makes it
so special.

So what we do. We import the flower from Italy,
straight from Naples, Italy. It's a very clean flower, it's
non bleached, non bromated, very high quality, and we bring
it in and we make the dough daily. We ferment
it for forty eight to seventy two hours. We also
import the blue steel pans that we cook it in,
which really emphasizes the Roman style. We import all the

cold cuts, the presuto, the salami and everything from Italy.
We try to source non nitrate added cold cuts. Perduto
doesn't have any added nitrates, what Tadella doesn't have any
added nitrates. Yeah, it's really one of our focuses is
to really bring in clean ingredients.
