Welcome missus Connoisseur's Corner. I'm Jordan Rich. We've been in
conversation with a terrific chef and owner, Jason Karen, Chef,
owner of Post nineteen seventeen and reading. Jason has revolutionized
in the New England restaurant community for two decades and
he's been an inspiration to other chefs and restaurant tours.
Share with us now, Jason, your thoughts on what makes
for success in this business.

One of them is love and you have to have
a love for what you're doing, the love for the
ingredients to make people happy. If you have love and passion,
that really pushes you to get that word out there.
We train every day, we learn every day, We educate
our staff every day. I work with the chefs every
day and we just talk and that passion and love

goes into those conversations because we want to make sure
we're getting the best ingredients. On top of that is consistency.
It is the hardest thing to do the same thing
every day and you have to be as good or
better than the day before without changing any ingredients. The
other one was discipline goes helps with that consistency. You
have to be disciplined not to break the recipe. Even myself,

I can't go, oh, this is gonna taste better. No,
I have to make sure it tastes the same. So
when people come in on a Tuesday and then in
a couple of weeks on a Saturday with their friends,
they have the same experience with the same food. It
all starts with love. You have to have love for
what you do.
