Welcome to Connoisseur's Corner. Jordan here talked in our previous
segment with Anthony Cattarano, the owner of Presa restaurant located
on Fleet Street in the North end of Boston. We
talked a bit about the amazing food. What's the secret
to your success now celebrating your twenty fifth anniversary, Anthony,
I think.

We've always sort of paid attention to the overall picture
and doing what's right for the customer. We try and
hire really good people, and we try and look at
the employees of like a long term investment. You know,
if we make a hire, we tend to pay a
little bit more than everybody else, try and keep employees
at the restaurant and not a lot of turnovers. And
(00:39):
I think what that does it sort of creates some
consistency within the restaurant. So when you come in, you
see a lot of the familiar faces in the wait staff,
and then the people that are cooking your food. They
do that every day. We have a lot of employees.
I've been open twenty five years. We have day one
employees still in the restaurant business. That's not very common,
and I think that's really been one of the differences
that sets us apower from a lot of people. It's

just that overall consistency. We're consistently good, you know, and
I'd rather be consistently good than occasionally excellent.
