This is Connisur's Corner. I'm Jordan Rich in conversation with
one of Boston's finest chefs and owners, Jamie Bissonette. And
we continue to talk with Jamie about restaurants on Temple
Street in downtown Boston, all within a few feet of
each other. This one is called Sushi at Temple Records,
and Jamie, you and your sushi chef Kenta have created
a unique dining experience. Please tell us more.

I think what we're doing that's different with the Sushi
Temple Records is how Kenta and I kind of wrote
the menu together and how ten to execute the sushi.
It's very straightforward, and for us, it's all about featuring
amazing fish handled well, with the fish and the rice
being close to the same temperature, a lot of those
little details, and less so about some of those more

modern takes where it's the sushi is more about interesting
combinations of flavor infusion, where ours is really just straightforward,
very classic Japanese.

Also, the presentation means a lot when it comes to
this kind of sushi, doesn't it.
Speaker 2 (00:59):
Oh yeah, I would say so. I mean I think
the simplicity of it means that it needs to look
really good, so it can't look great if it's surrounded by,
you know, a bad picture frame. You can't make it good.
A good photo look better with a bad frame, So
