Welcome to Connoisseur's Corner. This is Jordan Rich, New England. Sweetes, Donuts,
bon Bonds and Whoope Pies. The author photographer Susan Mara Bregman,
is joining me once again. And folks around the world
know about toll House cookies and love them. But it
all started here on the South Shore of Boston, and Susan,
you've got the story.

Speaker 2 (00:19):
So Ruth and Ken Wakefield ran a restaurant in Whitman, Massachusetts,
called a toll House Restaurant, and Ruth was an accomplished cook.

Speaker 3 (00:28):
But her claim to fame is inventing the toll House
Cookie in the late nineteen thirties. And of course, the
toll House cookie is a chocolate chip cookie, but when
she invented the cookies, there was no such things as
chocolate chips, so she had to either chomp up the
chocolate or kind of shave the chocolate off a larger
chocolate bar. And what's interesting about the toll House cookies

(00:48):
is she ends up forming a partnership with Nesley Neslee
starts adding little scoring marks to its chocolate bars to
make them easier to chop up for cookies, and eventually,
starting in nineteen forty one, Nesley actually began manufacturing chocolate chips,
so it's a really unusual case of a company developing

a product after the recipe is created.
