I remember after we open up the restaurant, the demand,
the demand was so high for us to be able
to keep up with the demand. We didn't have a team.
I think the key is once you have a team,
things get better. And when we opened up, we didn't
have a team. Now and you know, we just had

to kind of just go and see what the business
was asking us to do. And even though it was tough,
it's very rewarding business. It's hard. A restaurant is very expensive.
A lot of people say like, oh, you guys sell
so much, but the cost is so high that it's
(37:02):
it's hard to have a restaurant and operate. But we've
been so blessed with the business and our customers, our community.
We get so much love that it's helped us kind
of like survive. A lot of people say like that
a restaurant takes a couple of years to take off,
and for us it was almost like instantly. But it
(37:25):
was difficult. It was difficult because we didn't come from
the restaurant. I think if we would have had any
kind of restaurant experience, it would have been easier. But
I was in aerospace. I was a program manager, so
basically like when I looked at the restaurant, it's a project.
So I said, Okay, how am I going to do
to feed all these people. So then we started kind
(37:45):
of moving stuff around my dad, my husband, my daughter,
and then all of a sudden, once we develop a team,
once things got easier. Once we develop a team, we
you know, it's always about you know, bringing the cost down,
and it just things got a lot better.

But it's what's sorry, what's the hardest part?

What was the hardest moment that you're like, shit, have
you ever did you ever think of like, damn, I don't.
Speaker 4 (38:10):
Know if I can do this. Every like the first
month being there, twelve hours, I would cry. I would
cry because I'm like, I can't handle this. It is
way too much having a restaurant. It doesn't stop, it
doesn't stop, and you wake up, you go to the
restaurant and then you know you're there at the end.

And also the feedback, right because we weren't we didn't
come from that background. We had to learn and you know,
we want to do everything perfect, and when you see
that stuff is not coming out perfect, that was really
hard to handle. It's kind of like the constructor criticism, right,
Like it's hard. It's hard because you know, we wanted

to do a good job, but I just wasn't pleased,
and that's been really tough for me to be. You know,
I take all the feedback, good and bad. I don't
just want to hear about the good stuff. But I
think it was kind of like processing what we weren't
doing good and trying to make it better. That has

been the biggest challenge always because there's always room for
improvement as a business. Our customers didn't care. At the
end of the day, when you see that somebody opens
up a restaurant, you know they signed up for it. Yeah,
so it's not you're not gonna feel sorry and say like, oh,
today they can't do this, or today they don't have this.
At the end of the day, you're opening your doors.

You're a restaurant. You have to be professional and you
have to make sure you serve the best quality food
to your customer at all times. There's no room for all.
Today it wasn't good enough, you know. So that has
been really tough. Like, you know, everybody kind of like, oh,
you know, they get so happy. I look at numbers,
I look at the liabilities.

Yeah, and it's really stressful to to look at the
whole picture and say, like all these families are depending on,
you know, for their paycheck, and I have to make
sure that I make the right it's done right, that
we make the right moves for for and for the future.

what's the one thing you want to do different or
advice if you're starting a new business as well, what.

I what I would do different? For sure? I think
build a team before we open. And that's kind of
where we learned a lot from the first one and
now we're ready to make the changes. A process. Everything
has to have a process. And even though we kind

of like went by what the customers were demanding or requesting,
now we have to sit back and make sure that
we have a process for everything because you can't just
wing it all the time. And that's kind of what
I felt at the first couple of months. And now
we hear pola number two. It has a process, there's

a full operation, and we have a team. I think
the key to success no matter what business you have
is building a strong team.

say like, oh, they're well connected with influencers. No, we
knew nobody, Like we had no connections. And it was
kind of like word to mouth. You went and there

come by and everything, it's amazing what the power of
the of the influencers, what they can do to a
small business.
