And how do you do that? But when you bless
yourself with a good meal, you recuperate your mind and
you get your attitude right for this upcoming week, because

it's going to be hell fighting Wednesday, Thursday, Saturday, Friday,
Saturday leading into flying into Chicago to take on the Bears,
who just beat the Washington Commanders past Monday. And you
know what, that has nothing to do with nothing, because
we are focused on the world renowned chef and businessman,
founder of Mama Fuco, David Chang, Big Dog. I appreciate

Yeah, man, I mean you got the Dinner Time Live
with David Chang on Netflix, which you know just just
started tapping into your podcast yourself. I mean, you know
what got you into that space from you know, being
being a chef to multiple restaurants.

Yeah, I didn't plan on doing media at all.
Speaker 4 (01:50):
You know, at the time when you started cooking, you know,
you only saw stuff on PBS or Food Network. And
then some chefs that I really admired started doing tell
levision that were great programming. There's a chef in the
UK named Heston Blumenthal, and he had a fantastic show
that promoted his restaurants and seemed good and he didn't
lose any credibility.

So uh, that was like a no brainer.
Speaker 4 (02:13):
Once he said, you know, laid out the framework and
then just started to dapple in it, and you know,
twenty years later. I never thought I'd be on as
many TV shows as we've done. It's been.

It's remarkable, very blessed.

I understand, and look, I've I feel like food and
fat guys go hand in hand.

And I've been a fat guy all my life.

So you know, like when it comes to tailgating or
watching the game, there's got to be food of plenty.
When it comes to my life and the ups and downs,
foods is a necessity. And you know, I think I
probably started off watching what what was that it was?
I always messed this up. I always call it digs,
diners and drive ins, and it's not. It's diners, dives

and drive ins back in the day. And you just
have this super huge appreciation for the people that can
do those that can't do. You know, teach and I
try and teach my kids how to make eggs because
that's you know, we're okay, we're not excellent like you are,
but we do all right, you know when it comes
when it comes down to it, Man, you're sort of

in that pathway of leading the way media wise as
well as you know, international food wise. I mean, you've
got again restaurants everywhere.

Yeah, I mean, uh, you know, every day just trying
to stay in business.

That's the way I look at it, right, And you know,
doing media is one thing, but I don't work in
the day to day in the restaurants anymore.

You know, I've always followed sports for a long time,
and I always thought that, you know, it's always assed
obsessed with the peak window of when you're at your best, right,
and cooking is one of those things where there is
a moment in time when you're in you're at your
best for sure, there's like a few year period and

then you're not. And I never wanted to sort of
fade away, and I always wanted to be prepared for
what's next. And another thing that and I'm sure clearly
you know better than anybody else, but people forget or
don't know how physical cooking is. You know, if you start,

if you're working like the meat row station, you could
be carrying like maybe you know, honestly, like two hundred
you know, I want to say two thousand pounds. I
don't even know the pounds. It's in a ridiculous amount,
up and down all day. So it's no surprise when
you see chefs in their forties and fifties. They have
knee replacements, hip replacements, shoulder replacements. So you know, your

body just breaks because it's a it's full on all
the time, and there's no off season, right, so your
body just breaks. And and I knew that physically, I
couldn't be able to do what I did ten years ago.
Speaker 3 (04:56):
Right.
Speaker 4 (04:57):
I have a you know, my shoulders replaced. I have
a prosthetic in my neck. I gotta get my L
five L four a play sometime soon. You know, I
just can't cook the way I used to be used to. Yeah,
you should be aggressive. That thing I know about the
L four L five dissected me. It gets real in
the nose tackle do you tackle?

How much of that competitive nature from playing football golf
drives all that you've done as a chef, you know,
and as a content creators, as a restaurant owner as
you know the mama fuku gup.
Speaker 3 (05:30):
I mean so much. You know, my dad grew up.
Speaker 4 (05:33):
I grew up basically because my dad wanted me to
be a pro golfer. And I played golf every day.
That's all I did, three hundred and sixty five days
a year. I played golf before golf became cool. You know,
like now you go to a course anywhere in the country,
you're going to see like an Asian dad yelling at
their kid. My dad was the first, really was the first,

and you know, I burned out and I never really
played team sports growing up golf, so you know, I
played some soccer here and there, but once it was
shown that I was good at golf, that's all I did.
And then I was accruited to play golf in high
school and I actually never panned out, you know, so
(06:19):
I tried out for football team just because at that time,
that's what everybody did on your freshman team, you know,
freshman year high school. And I got to tell you, like,
that was the craziest experience of my life because I
never knew that you could get hurt and people would
like hit you.
Speaker 3 (06:35):
That was just like a.
Speaker 4 (06:37):
If you've never been hit before in pads, right, Imagine
you're just playing golf all day and you're like, what's
going on. I don't understand the need to overcome pain, right,
the need to have accountability with a teammate and a
coach just yelling at you all day long, and that
was like a big thing for me. It took a
(06:57):
long time for me to even understand what football was
even I watched it. It was such a foreign thing
to me, playing a team sport and also being in discomfort,
like constant discomfort. And I was not very good my
freshman year, and I was not very good my sophomore year.
It was not really good my junior year. And then
it's just sort of clicked, you know. I was like, Oh,
(07:20):
I got to like really work at this and and
I just sort of just overcome a lot of things
sort of like shaped my sort of football days in
terms of what I brought into the cooking industry. And
one is tolerance of pain and accountability with your teammates.
Speaker 3 (07:39):
Right. I didn't realize that playing a team sport I loved.
Speaker 4 (07:42):
I love being told by somebody, Hey, you know, do
your job, you know what I mean.
Speaker 1 (07:48):
Like get you your job, you know, and.
Speaker 4 (07:51):
Like when you're only playing a solo sport, it's just
such a weird thing to have somebody tell you that
you're peer like step up. And the only time I
ever felt that kind of atmosphere was in a kitchen.
And I got recruited to play d through football and
the NESTCAC and I want to go to Trinity College,
(08:13):
and you know, there's no scholarships.
Speaker 3 (08:16):
And I was good.
Speaker 4 (08:18):
I made all leagues in the DC area, and I
knew that it was never going to be a thing
for me. Right, I'm not athletically gifted, and I just
I'm a grinder, right, I will work my ass off,
And those are all sort of attributes you need in food.
But when I got to cooking, you know, like I
(08:42):
didn't realize that you have a bunch of people that
you would never expect to be serious people when they
put on the whites, these guys are clowns. They're like
pirates outside of the kitchen, you know, But when they
put on whites, they're as serious as can be. And
(09:02):
I love that intensity. So there was a lot I
took from playing professionals, like not professional organized sports team
sports football, that I took from high school into professional
kitchens and golf. What I learned is always looking at
the scoreboard, always realizing no matter how good you are,
someone's going to be better than you. And that's a
(09:25):
hard thing to learn when you're thirteen years old, right
when you think you're the hottest you know around, and
then I'm sure you know football players feel that all
the time. They're the best in high school, and then
they get to college, they're not the best anymore. They're
the best in college, and then they get to the pros,
but not the best anymore. It's a humbling experience.
Speaker 2 (09:42):
Yeah, you got to look, you got to embrace the challenges.
I actually look forward to when I wasn't the best, though,
you know, when it came down, when it came down
to college, it was like going from high school, I
thought I was a top dog, you know, scholarships glore.
Speaker 1 (09:56):
You get to college, you're like, man, these are these units.
Speaker 2 (09:59):
Like I didn't know men were built like this, you know,
I didn't know they could be six to six and
have these abs and be way two ninety five and
still run as fast, almost as fast as me, or
you know, have these attributes that you're like, man, this
is world class beed.
Speaker 4 (10:13):
You know, come on, cam you you're like a world
class athlete that you cannot fix that way.

No doubt. But that's the sit like you always like, man,
he's built like a unit. Like you know, in my
high school there was me at six four at you know,
defensive van two sixty five to seventy two seventy five
by the time I left high school. And then opposite
of me was a future number three overall pick Dion Jordan,
which he was six', eight you, know to, thirty but

he ran like a forty, seven four HUNDRED i.

Know he went To university Of, oregon right.

Right, Exactly so that's WHAT i was stparing myself at her.

the field and there was this. Monster i've never seen
a human being this big in my, life and it

i was, like, oh you. LEARNED i was, like this
is not going to be a future thing for. Me

hungrier you, know like it makes you challenge, yourself like all,

football SO i talk to all of this guys shirm
and wit and. Fits it's, amazing, Right it's like the
best THING i do is getting to hang with those
guys BECAUSE i ask him these ridiculous. Questions because in,
COOKING i now come to the conclusion that the most talented,
cook the cook is very, different never makes a great, chef,

right because you've never developed, Humility you've never learned to
empathize with other cooks that are not nearly as good as.
You you're just, like why can't you make? This why
can't you cook like? This, well you, know the other cooks,
Like i'm just not as good as you. Are AND
i think that being good enough but not the greatest

cook translates to being the best. Chef, NOW i think
it's a little bit. Different it's not apples to. Apples
but do you feel like the most talented athletes in
football always?

determining factor for being? Great like your career has been,

like i have this responsibility to play for, my guys
and THERE'S nothing i want to do more than winning
