(00:00):
Welcome to don't drop the tongue. That is April ninth, and we are
doing it again. We being Kylefrom your behind Barbecue, Birds and Bones
in Florence, Arizona. Myself,I am Waddell Restaurant, your restaurant down
there. Don't be so offensive.I'm on one tonight. I know I'm
very you're very angry. I gotanother question, though, Can we get

(00:22):
a substitute teacher, like you knowhow like when teachers can't show up like
Phil, can we get a substitutethat's just like, hey bro, can
we call you in or hey youBecause once again, as we get ready
to get started, by the way, I'm barrel. As we get ready
to get started, once again,Phil is not here. Though we do
know Phil has surfaced because you mayhave seen the clip that was all over

(00:44):
social media of Phil accepting an award. It looked like somewhere on the East
Coast professing his love for the EastCoast. But yeah, was that it
was? I don't know what itwas. I got it, but he
didn't get a golden ticket. Iknow it was at first it was quite
the thing. And also I'm curiouswhether or not he's gonna give me my
flowers if we do talk to Phil, because he used my mother's pizza do

(01:07):
recipe. Yeah, I think hedid on social media, but I don't
know. But is he actually goingdid he actually say it in the competent.
I'm just curious because it's Phil.I know it's Phil. You never
know though, and he made asocial post, but you never know of
Phil. I could see Phil claimingthat you know, this is the Phil.
The grips like the Philly crack wingsare supposedly never nobody never ever,

(01:30):
never done before for doing them. But well, I mean, nobody's ever
done a smoke fried wing before. But I can't claim that this dough is
strictly mine because well it's been donebefore. But anyways, so we don't
know whether Phil's joining us. Wedid call him before we began this podcast.
He said he was jumping on acouple minutes and bringing a special guest

(01:53):
with the boy. You never know. No, So while we while we
wait for Phil and his quote unquotespecial guests, you show up. Let's
getting up there in the restaurant world, Kyle, you how was this past
weekend? Slam slammed, absolutely slammed. They had a road to Country Thunder
out here. So it's like abig pregame before the big game, which

(02:15):
is this weekend. And you know, we got our liquor license and all
that, and I got the Hillbillygatorades. Those were flowing. People were
leaning out of here. I meanit was like, what's a Hillbilly gatorade?
So Hillbilly gatorade is blueberry moonshine mixedwith berry red bull And it's like
my all time like go to whenI go to these country bars back in
the back at my prime, Igo to these country bars and they have

(02:38):
like Hillbilly Gatorade, but they'd havesome stupid name for them, and it
would get me. I mean, these things get you feeling, right Like
people think I'm not touching that untilthey try it and they're like, huh,
it's pretty good. My limits fourAnd there was like people in here
having them. They were leaning. Then we started the country dance thing going
on in here. I'm like, you don't really have much of a dance
floor in there, not at all. No, I know, it was

(03:00):
packed, bro, it was absolutelypacked. These people are two stepping and
stuff. I'm like, all right, and you know, thing with the
liquor license, bro, Like you'rein charge. Like yeah, so I'm
sober as hell in the back, you know, whipping up stuff. And
I got a watch and it's like, you know, And then I got
younger high schoolers that are that aremy servers, and I always tell them,

(03:20):
I'm like, look, if anybodypops off or anybody starts doing something,
you know what I'm saying, likethe creepiness, you know what I
should say, you know, letme know so I can go handle the
situation. But thank god, noneof that went down this weekend. So
life was good. So no,it was a good week license another day.
Yes, I know exactly exactly whatyou sell this week everything everything completely.

(03:44):
So here's my thing. Saturday Roadto Country Thunder. The thing started
it like five and it was overit I think nine thirty or ten,
and this place and we close iteight. But this place was so freaking
packed, people drinking, people eating. I said, I made the call.
I said, screw it, let'skeep cooking. So I cooked up
a bunch more stuff and we keptslanging, and I think our last meal

(04:08):
went out at like ten thirty.Eleven o'clock was the last plate so we're
pretty normally close eight wow, butwe were packed, and I made the
calls like dude, let's just keepgoing, Like I'm not kicking these people
out. They want to drink, they want to do this, they're eating
and they're ordering, and I'm like, screw it. Well, I'll worry
about Sunday, you know, Sunday. So I knock you know, we

(04:30):
knock all this out. I thinkI like I said, I think our
plate went The last plate went outat like ten thirty. People are drinking,
having a good time. Country music'splaying. Life's good, Life is
fine. So I started doing inventoryand I'm like, oh, well,
we don't have this. We don'thave that, we don't have this,
we don't have that. So Isaid, okay, no problem, play
and b is I call Cooffeini.Coffeenie's the rescuer. So I say,

(04:51):
hey, you're going to have tohit up restaurant depot, which basically is
a home depot for restaurants. Youbuy everything there, you know. So
we needed wings. I had tosmoke win and you know, we needed
more ribs. We needed you know, all kinds of stuff. So I
gave him a whole list He's like, no problem, blah blah blah,
I'll be there at six. I'mlike cool. So six thirty seven o'clock

(05:12):
runs, you know, rolls aroundseven thirty eight, and I'm like,
okay, something's wrong. Coffeini callsme and he's freaking out and somebody pulled
out in front of him. Ohno, and he totaled his vehicle.
Oh no, somebody. He's fine, he's fine. I was. I
busted his balls about it, buthe's fine. Everything was good. Well,

(05:34):
he's fine. His truck's totaled. The old man that pulled out in
front of him, his car istotaled. That's a whole different story.
But Coffeeni's fine. But Coffeini hadall the food in his truck that got
demolished. So what Thank god,Coffeinie's fine. Everything's good. So I'm
thinking, I'm like, okay,well he's in a wreck. Maybe I

(05:56):
can send somebody to co pick upthe food. The could be struck.
Yeah, but you know with accidents, bro tow trucks are there and cleaned
up, in truck gone, everything'sgone. And like so it is there
rotting food in the back of histotal truck? Yes, yes, there's
food, but it's in it.It's in It's not his problem anymore.
It's in the tow trucks, butit's in the open that door, and

(06:17):
be like woof yeah yeah. SoI was out of everything. So now
I'm thinking, what do I do? What do I do? What do
I do? So I came upwith a bunch of specials of the food
that we had. So I madelike a barbecue trio, which is like
a bunch of I had a bunchof what do you call those little slider
buns? So I made a bunchof slider things, cooked as much wings

(06:40):
as I could. Randa Walmart drainedthem of, like the wings, and
because I needed chicken wings and wewere completely out and I wasn't I wasn't
stopping Saturday night. So it wasgood. We survived. It was good.
I noticed that you sent an elderlygentleman here. Uh in his family
they said, no, boy recommendedthis place. And I said, okay,

(07:01):
awesome, perfect, And he's like, well, I really wish you
had this in this And I waslike, sir, let me tell you
exactly what happened. So I toldhim exactly what happened. I told everybody.
You know, I really wish Ihad your wings or this or that,
but you know, I told himand I was like, look,
you know, we're you know,we're still new. We're a month and
we're getting there. We're getting there, but we're getting better every day,
We're learning. Every day, we'regetting better. I'm cooking more food.

(07:21):
I think we're at probably forty eightforty nine racks a day and I and
those are gone. Those are goneby two o'clock. So people get mad
at me, and I'm like, bro, listen to me, like just
get here early, like if youwant. I literally have a line of
probably six to ten people waiting inline every day or Thursday through Sunday getting

(07:42):
in here because they know the foodgoes quick. But you know, we
cook as much as we can,but it is what it is. The
weekend, the weekend was good.It was a solid, solid, solid
weekend. Well that's good. Seeyou ready for thunder here? Yeah?
So bro check this out. Sothere's a girl that her name's Caitlin.
She owns a it's called Desert. It's like a T shirt women foutique place.

(08:03):
It's a very nice building. She'sgot a huge following she's got I
mean, she's massive online store typething. Anyway, she's Caddy corner for
me, and she makes this jewelrywhere she like solders. I don't know,
I don't know how it works, but they sold her jewelry and like
it's like hillbilly type stuff, youknow, like women things. I have

(08:24):
no clue. Anyways, Yeah, she does this so as girls are FBI
agents, I think I think allgirls should work for the FBI, because
she's talking about them on her showthis morning. Yes you know what I'm
saying. Wow, I one hundredpercent think they should. Like I don't
know what the government's doing, theyneed to hire all chicks because they figure
everything out. Anyways, So thisgirl tracks down Laneye Wilson's brother who lives

(08:48):
in Tucson. She sends Lanye Wilson'sbrother all this jewelry to send to Lanie
Wilson, and somehow she gets thisdude's number. I don't know. She's
telling me all about this Saturday. So she's the jewelry or he you know.
So the brother gets a jewelry sendsit to Laney. Laney went on
like three I think it was threethree shows all over the country wherever she

(09:09):
performs, wearing wearing this chick's jewelry. And now chick Caitlyn has all these
photos of Lanny Wilson wearing her stuffon stage, on stages at these three
things. How she found these?I have no idea. That's awesome.
And she's like freaking out and she'slike, I'm in. The whole family's
in Tucson and they're all coming outhere for her show obviously, and they're

(09:31):
getting Laney Wilson to go shop ather shop. So I haven't talked to
her yet, but awesome tomorrow. And she's a big fan of the place
too. She eats here every weekend. She's, you know, Caitlyn,
the girl that owns the store. She's a big fan of us. Like,
yo, like if she comes in, like, I will shut the
restaurant down. You tell dump truckto come on in. That's funny.

(09:54):
Yes, we're ready, We're ready, We're jack all right. Well,
if you're ready, if you're ready, I bring to you. Oh no,
Phil live from Yo a car.I'm straight I'm straight out of the
I'm straight out of alleged Connecticut.Baby, you know what I mean.
I'm on the East when you gothey, you haven't religions? Go hey,

(10:20):
hey, Phil, though, Ihave a question for you. No,
I got a question for you.Cannot ask my question first, No,
I went first, I said,I led first the question. So
you are you're you clean? Youclaim to quote unquote be a Yukon graduate.
Okay, Yukon played in the nationalChampionship in the final four this weekend

(10:41):
here and you here hurt me.I know it hurt my feelings. And
you know what else? I foundout, Barrel, you cannot bet on
the home team if you're in thesame state in Connecticut. Because I was
betting on Yukon last night and Iwent on my app and it was like,
the law is that Connecticut you cannotbet on college a college team in

(11:03):
your home state. I was like, this is some bull, Barrel.
I should text you and say,yo, put my money on here.
Oh you would have had been alot to win much because those odds weren't
trust me. I was all boutit. All right, So you are
you are in Connecticut? What whatwhat has you? Back East? Yo?
All right? So back East?I got two grand babies in Groton,

(11:24):
Connecticut, and a daughter and myolder granddaughter and you here chuckling in
a passenger seat. I can't waitto I'd rather talk about in my in
my uh yeah, it's de springbreak and I found then sc a comp
that I was able to pull upin over the weekend, you know what

(11:46):
I mean? And how did youdo? Yeah? We made a family
trip. We made a family trip. Did family out there to the contest?
Me and so, me and son, me and me and her.
Yeah, man, yeah, Ican't wait till you give her the phone.
So we have to know, though, how did you do? Yeah?
What happened? All right? Allright? You want to you want

(12:07):
to hear. You want to hearwhat happened? How did you do?
I don't want we don't want toknow. Bs. All right, okay,
don't drop the tongus because all right, first off, I want to
say we got so much love outthere. Everybody was like, yo,
don't drop the tongs you missed lastepisode. I'm like, how am I
in on the other side of thenation and people know that I missed last

(12:31):
episode, Like it just dropped likeon Thursday night or something like that,
And everybody already know on Saturday boardingthat miss last episode. But he was
getting mad love respect to them EastCoast. Was it a state mob East
Coast or something like that? Yeah? Yeah, Yo, it was mad
love out there. So I hada game plan, right, I've been

(12:56):
I've been hitting up Barrel. Iwas asked Barrel for his mom this dough
recipe for Detroit pizza. I've beenhome flipping dough. Don't call me dough
boy, but I make dough, you know what I mean. So I
was doing all the mama Barrel's recipe, And did you follow it correctly?
Like the water temperature? No?No, Bro. I was like a
scientist. I had right, Ihad I had a I had a scale

(13:20):
out, and I'm weighing the workand putting the dough together, and I'm
like, yo, it's insane, right, and it's like stir in this
direction for this amount of time, then counterclass exactly, Yo, kneeling for
this amount of time, letting proofof this. I'm like, bro,
this is a lot of directions. No way, Phil, use this recipe.

(13:41):
No way, I will I attest. Yes, he did. For
once he followed someone's recipe. Wow, I was gonna say, no way,
Phil's out there doing no way,No way, he's doing that,
yo. So so Barrel, I'mcoming back with the third place trophy for
mob dukes. She gotta take it. She got she gotta take it.

(14:05):
I'm bringing, I bring and yo. And we was only away from second
place, like eighth above. Howmany people were in the cop It was
fifty. It was like fifty one, fifty people. Fifty one people at
this back Yo. Yo, itwas crazy. I love East Coast like

(14:26):
competitions, but Kyle, I knowthey all do the same thing, right,
and it kind of brings out whata lot when we had our last
guess on and it was like,yo, you gotta, you know,
when you're in the area, kindof stick to what everybody else is doing
because it becomes unfamiliar. My tastescores was point on steak my done.

(14:48):
This was like forty nine forty eightand I couldn't understand it because me and
Sonny did a test steak out there, split it open, bro and it
was dead nuts. So and allof them, all of everything I did,
tryhards. I did it the sametemp. I pulled it, you
know, one rested to like youknow, thirty eight, like the one

(15:09):
we ripped open, and then theother one rested to like one forty one.
It should have been dead nuts. But this is the deal that I
noticed that these cats do out here. They make perfect circles of this steak.
Yeah, and East Coast and eventalking to the judges, Yo,

(15:31):
they told me, they was like, yo, you know, we want
to see a steak. We don'twant to see you know, something made
into a steak. We went so, you know, I give them the
natural beauty, like cop saying, but you trimmed, Yeah, you trimmed
the tail off. You did allthat. Now, remember they got to
they cut the steak in half beforeit even gets to a judge's hands.

(15:52):
So there's no way they're going toknow if that, you know, if
they want it to look like anormal steak. Bro, what I'm saying,
I know what you're saying. Everybody'ssteak was perfect circles. Wow that
that bro, That East Coast moteakthey don't even play. I'm not hating.
I'm not hating at all. Iloved it. I loved my scores

(16:14):
because I wasn't far off and andmy ribs. I went through my rib
practice, but we I had ribson and we was also doing stake selection,
and I didn't put them in thebottom of the pan and it got
dark on the bottom. But Istill came in like twelfth place. What
kind of rich did you? Did? You do? Normal ribs? I
did? I did Perry Fresh, competition pet yeah yeah yeah, competition style

(16:40):
yo, damn money my yo.I got the top taste score yo.
And in my texture and what else? I didn't hit it. Everything was
fifties. But it was just soit was such high of a point,
you know what I mean, anythingcould have knocked you off. You know
what I mean. Your you hadto turn the red mountain immediately from ribs

(17:02):
into like for the pizza. Yeah, I had one cooker out there.
Yeah yeah, So I had tofinish my ribs before I could even put
the pizza joint on it. Pizzawas in first, So I cam Bro,
you know you know how I doOh yeah, I know I know

(17:25):
how you do it? The bixedMoidel bix Ologies of the Joy. But
all right on, so give thephone, give the phone to Sonny.
Now it's Sonny's turn. No,I don't know if I bout like this,
I don't know, all right,So we're gonna set the table here.
We're gonna set the table here realquick. We've we've mentioned this lovely

(17:47):
woman, We've called her a saintsof God. You uh, we've said
that you were a professional, likeI don't know, like a circus handler.
I mean you you handle kill thegrill. We are talking to his
lovely wife Stunny who me the grillexactly. I don't sendy. I don't

(18:08):
know how you do what you do. I don't and I only know why
not know how you do. Ihave to ask why you do. It's
a lot barrow, you know whatI will have to say, Thank you
Beryl. First of all, thankyou Kyle, because Kyle lesbian and I
love Kyle, I love Pops,I love Tyler, I love everyone.
It is a lot of work. He's like the mad scientist and I love

(18:32):
him so much, and it isI can't explain what it's like at home.
I couldn't. I drive on youknow, ten eight twelve hour trips
with him. I couldn't handle it. I'm double phil after the car.
I spend ninety minutes a week withhim, and that I'm done. You
Pops have had a glimpse into mylife, so I am what is the
Sioux chef, the jack Ball tradesthe mind reader. So while he's coming

(18:57):
up and he's like thinking and he'shis mind is like one hundred miles ahead
of me, and I had tocatch up. This is like on a
daily basis. So I've seen it. I've seen it in action. You've
seen an emotion, you see theaction. I will say that the people
this weekend, they were so lovely. There was so welcoming. It was

(19:18):
like it was a really great experience. It was extremely extremely cold, and
the people around us were like sogiving and you know because of course,
and Kyle, I was going toask you that was my next question.
This was my next question. Wewere there were some things we were missing,
of course, I know, sowe had to do we had to

(19:41):
make do so. But I hadto say the the host of the competition
was so well Scotty Scotty. ScottScotty like provided us with so many things,
and we did, I have tosay t s A. Yes,
we did have to have a lotof items come through T say, and
we did get We did receive alove note from TSA, so you know

(20:04):
they did comment on what was inour bin. But like it was such
a great experience. It was reallyreally cold, but so many people were
so nice and so welcoming, andit was a great experience. I will
say this, all of our competitionsit's the same. So whether it's Kyle,
it's Smitty, it's whomever it is, that like fills in the blanks.

(20:26):
It is such a great experience becauseyou're competing, but everyone is.
It's it's a family affair. Soalthough you're competitors, like whether you know
you're like your flavor profile, yourtechnique, whatever it is, that's so
similar, but it's different and it'slike it just comes out to the expertise

(20:48):
of the pitmaster and I love it. It's good. Well, you know
that's why they call it there exactly, there's that big saying sca family,
barbecue. Family, there's that wholething. Every contest, it's every he's
welcoming and everybody's I know what youI know exactly what you're saying. Everybody's
cool. It's not like it's acutthroat type deal you would see on TV
or something. It's not even likethat, not at all. And then

(21:10):
you have like the people by position, the sou chef slash wives slash teamers.
You don't get all of the love. But I'm the background person holding
up agree, Yes you are.Everybody whoever has been in our circle knows
that I'm back in the I'm likein the background holding it up right.
Oh, we know, we're wellaware. We're well aware. Do you

(21:36):
do you dress Phil? Do youdo you pick out his clothes? I
was gonna say concerning I don't thinkthe guy can sometimes dress himself. Yes,
yes, Beryl, I have myangel wings. Everyone knows that my
angel wings are always flying angel wings. I think you need a whole I
think you need a whole fleet ofangels. I mean, you know how

(21:57):
they talk about like Mother Teresa inher day, which she was like like
out of world and was like that'syou, Like you were like, what
should be up for st there shouldbe Saint Sonny the grill, Holy biscuits.
I don't know how you do it. Now, all right, since
since we're since you have the phoneright now, we need to know a

(22:17):
story of when Phil was in acompetition when you just literally not just did
a one palm into the face, just did put your head in your hands,
and what is going on? Weneed one of those stories because I
know you got an encyclopedia, thenjust give us. I think Reno would

(22:38):
have been were fighting like cats anddogs in Reno. That's one of the
first kind of mine. So perfect. Oh my god. So I have
to tell Beryl, like everyone KylePops justin h smitty Molly, everyone knows
that, like I'm so patient,Like I like, I'm that's just my

(23:00):
disposition. But in many years,we've been doing this a long time,
and every now and then has comethe time where I'm like, I am
about to kill commit murder blah blahblah blah blah. So we're in Reno
and we're and my niece, mylovely niece, and my my niece's daughters
and her husband all drove up toReno. We all like made the road

(23:23):
trip. We bought Gooch. Gooch'scousin dog was there. Yeah, it
was a great time. But however, tensions, as everyone knows that competes,
whether it's like friends, wife andhusband, whatever the case is.
You know, you have certain experiencesas the clock tics, it gets very
very tense, and it's tense whenit comes time, when it's come when

(23:45):
you know you have to box andyou know, it's just it gets very
very tense. So Phil and Iwere in the the RV. The tenses,
the tense was very high, andhis his disposition and his demeanor was
becoming very very tense, and hewas saying things. And as a wife,
I'm like, okay, I'm I'mtrying to be nice and accept that,

(24:08):
but as a human being, I'mlike, I'm about to kill this
person. So at a certain pointI had to tell him, like,
either you calm down, or we'regonna have to go behind this RB and
we're gonna have to have a discussion. Discussion was going to be I was
going to lay my hands on himbecause, as everyone knows, when you

(24:30):
come to that moment and the clockis ticking, and I get it because
he's a mad scientist. He's like, you know, making everything happen.
But at the same time, likeyou have to keep everything into perspective.
You know, it's it's tense, you're plating, You're like trying to find
the right like whether it's the rightpork pieces, the right ribs, the
right chicken, like, you know, it's just but it was a learning
experience, was that really? Itwasn't a learning experience. It was a

(24:55):
moment in time where you have torealize that your mouth can overload your ass,
my mother says, And so youhave to be as my mother would
say, So you know, youstill have to be cognizant of your counterpart.
And he had lost his mind andI was going to kill him in
Reno, but disposition. Yes,yes, the murder almost happened in Reno,

(25:26):
but we did GC, and Ialmost killed him the story. That's
what it takes fulfill the grill, the GC. My wife got to be
almost ready to kill you because atthat moment in time, you know,
there's so much on the table. You know, you're so concentrated on the
product, the cook time, thetaste, the tenderness, the appearance,

(25:47):
and it becomes so intense and youwant to make sure everything's perfect. So
emotions are heightened and you're you're,you're, you know, you're so hyper
focused on ensuring that your product isthe best sentation of who you are.
Yeah, and at that moment, you still have to be respectful all of
the fucking person next to you.So, yo, look all right,

(26:08):
that's enough, that's enough sunny talk, bro. My cut off. Yoah,
check this, but check this out. I love you guys. I'm
on vacation, so I'm I'm goingto sign off. It's me and Sonny's
fourteen years. Oh congratulations, congratulations? Hold up? Hold up? Where's

(26:32):
where's Phil taking you? And rightnow he's got her in a car.
Where are the casino? The casino? Fourteen years? You're taking her to
a casino? Yo, Look,Towns is in this casino. I got
why didn't you why didn't you dressup? He did know, because this
is not okay, Tomorrow's are anniversaryofficially right now, we just pregaming for

(26:56):
the anniversary and we got to watchthe babies in the morning, so really
quick, we were in Okay, this is not barbecue related, but we
did a pre game in San Diegoand he was really kind. He was
about to flow find out all myfriends. Gordon Ramsey was there that weekend
and he got me incridly drunk onFriday night. I was so hungover on

(27:17):
my birthday. I couldn't even celebrateit. I was disgustingly hungover. We
pray game so hard it was bad. So, hey, what time?
What time was Phil's first beer thisweekend? On Saturday? What time was
his first drink, maybe eight am. And we did shots. No,
we did shots, and yeah wedid Kyle Kyle, and I'll pass the

(27:41):
phone back to Sun. I'll passthe phone. Look. Look, look
I wasn't drinking. I didn't havenot one bottle with me. She just
said, yeah, yeah, butthat was the nine to eleven shot.
You know, everybody had to doit. Look, they hosted me.
They had my head set up.I'm gonna be like, oh, I
can't do it, bro Like Mattfrom Australia was next door to us.

(28:03):
I forgot his team name, butMatt, he was really good. Like
he also the same thing. Hewas like by the end, he's like,
I need to drink. But everywe were all sober next everyone all
right, yeah, I get myegg game, Brodie. I'm just saying
I know, because I know howit goes when then you get But I
gotta go freaking talk to my brother. I gotta go talk to my brother.

(28:26):
Why my ribs came in twelve place? If these are the same ribs,
I'm trying to cook that smoke slamand let him and let him give
me a pass on this one,you know, because it was it was
right, But yeah, we're gonnago into this U casino, Yo barrel.
What's the first number on Roulette twelve? Now green double Zeros? Hit

(28:52):
it big? Now all right,I'm going with it. I'm going with
it. I'm going I'm going withboth. All right, go celebrate your
anniversary. Appreciate y'all. I lovey'all, I love ya, Thank you.
Tell Malma, Tell Malma Barrow. We got her war coming to him.
I will let her know I lovehim. Yes, I will let

(29:14):
him know. Oh, that's justliving the life in New York or Connecticut.
Must be nice, must be nice, must be nice. The grill.
He's the most beautiful soul. Iknow. I've always wanted to get
Sonny on here. Just no podcastshe got. Oh, it'd been great,

(29:40):
it'd be great. That's awesome.Well, good for film. Glad
he got a call. Thank you, Beryl for hooking him up with the
I just really don't see him outthere. That's well, that's what I'm
saying to her and doing what I'msaying, Like that dough, like that
recipe is intense, Like yeah, that camera, I have to look at
it, but it's like the watertemperture needs to be like, yeah,
you said it to me degrees andit's I looked at it and I was

(30:02):
like, nah, it's like seventysix degrees, and like your yeast is
X amount of grams. Yeah, and like your flowers X amount of grams
of flower and like you know everything, and you like turn you spin the
the mixture one way for like ninetyseconds another way. It's like and it

(30:23):
ain't no joke. I mean itis intense. But hey, if he
did it, it works. Imean I saw the videos and the pictures
that he sent, and I meanit looked dang good. Yeah yeah,
yeah, yeah, So you know, clearly he's clearly he did it.
He did it right. And andif he did the trick that I told
him to, which I'm not goingI'm gonna turn up soup and on it,

(30:44):
that crust really really browned up,which judging by the photos, I
think he did. So you did. I mean, he he did the
he did the turn up soup oryou know, he turned up soup to
it, like I was saying,so good on him. All Right,
I got a question, bro,Yeah, what what's the what's the what's
the latest thing on social media that'sbeen driving you crazy, like food trend

(31:07):
wise, Yeah, like anything poppingoff kind of driving you a little bit
nuts because I got them. Igot one that's just like, come on,
you sent it to me. Isent it which which was it?
So it's okay. So there's theseinfluencers, right and god, you know,
oh about okay, Yeah, thebrisket one, God bless them.
They can do it. But thesepeople that are just like throwing videos together

(31:33):
now that are just like it's almostlike there's this trend of like I don't
know what to do next, sothey just get a briskuit and trim it
half assed and that trim that brisketvideo. And again I'm not gonna call
the person out because you know what, they're making a living doing it,
so God bless them. I waslike that trim is god awful, you

(31:56):
know, and just you're in youryou've got influence on like you're like you're
an influencer. You have to haveinfluence of like showing people how to trim
a brisket and like this will makeit tender, Like what part is that?
I just don't get that's gonna makeit tender by trimming it that way?
It was man, but have youseen this, You've seen this latest?

(32:20):
Uh, everybody doing poppers these days. Poppers is like really popping off
right now. So I'm running.I'm running. Uh. We got about
five hundred and fifty fifty poppers madeready to hit the smoker tomorrow night that
we're going to be popping off atthe restaurant, so we'll see. Speaking
of videos, did you see uhthe ig food with bare hands his uh,

(32:43):
bro, his stuff's his videos. You're not following him masterpieces? He
cooks on a GMG. He's gotan alligator, he smoking a GMG.
Twenty million views, Yeah, ofcourse, Yeah, dude, the guy.
The guy is on you know, because MG's asked me to do videos
and stuff for him, make themcontent. And I'm just like, Bro,

(33:04):
I cannot compete with the guy withbare hands. I can't do it.
Like his stuff is immaculate, Likeit's literally watching like a commercial commercial.
You know what I'm saying. Incredible. If you're not following him yet,
make sure your food with bare hands, dude, stuff is legit.
I okay. You know one thingthat I will say that it's a really
annoying me on social media that okay, I know we've we've given grief to

(33:30):
people who with flat tops that type, so I don't fill has had issues
with that, right. Yeah. What I am getting sick and tired of
is people who are trying to everybody'strying to be like the Tepanyaki chefs,
which again, that's one of thegreat things about a flat tips. You
can do that, yes, buteverybody is like throwing like you know,

(33:54):
hot oil and everything else on itand making these big fireballs over this.
I'm like, dude, these peopleare gonna blow themselves up. And they're
like, oh, you know, they make it look in these videos like
it's so easy. I'm like,no, oh, yeah, it's easy
to make a fire. Yes,I mean it's not hard to make a
fire, but they make it looksafe in those videos. And now you

(34:15):
just feel their backyards trying to dothis. And I had a buddy of
mine that was like, yeah,I'm gonna do a Tepaniaki. Ninety's like
I'm like okay, He's like you'redowne the volcano and like, well,
yeah, the volcano's not hard,like you just it's like, I can't
do it. It's not it's easy. Stack it. You put vodka in
it. You put it and Iwas it goes oh, it does its
thing. Yeah. Well he's likeyeah, but I saw this thing where

(34:36):
you knocked the volcano down onto likethis whole pool of oil and it like
flares up. I'm like, you'recreating a grease fire and he's like,
well, yeah, it burns outright. I'm like, yes, it
burns out when the oil goes away. But you talked about making a puddle
of oil and I'm like, bro, like, no, that's not gonna

(34:59):
work. Well, Like, sothat's one thing I would say is I
mean, I'm all for the flattyp for being creative, but if you
are going to be doing any ofthis Tepaniaki style and going to be doing
playing with fire and oil in alcohol, yeah not a good mix. Please
be smart. Please make sure you'renot doing it under the overhang of a
house. Make sure you don't havechildren around, Make sure you don't eat

(35:21):
your eyebrows anytime soon, Like comeon people. Yeah yeah. But so
so I'm in a county. It'scalled Panal County, right, It's not
Maricopa, it's Panal. So thereis a they do this March madness bracket.
So they get all the businesses inPanal County. I think it's over

(35:42):
five hundred businesses, maybe more.I don't know, I could be wrong.
I didn't count at all, butit's massive, this massive bracket.
So we're they asked me, theyasked us to be a part of it.
So you know, we're a partof it. So the deal is
they post they post the storefronts ofeach business and you're you're ranked you know,
one through or whatever it is,and so then you go head to

(36:02):
head with these businesses, and thepeople of social media or anybody that's online
can even give a heart for onebusiness or a thumbs up for the other
business, and you get like threeor four days and then whoever wins,
now you move on to the nextthing. So I was not aware that
we were in this in this tournament. They kind of we were already in

(36:25):
it, and then they kind ofreached out and said, hey, you're
in this tournament blah blah blah, and I was like, okay, cool,
So I kind of like checked itout and we were in the I
don't know, I think it wasthe sweet sixteen by the time he told
me, and people were just Imean, we were crushing, crushing,
crushing, crushing, and I'm likeall right, and he's like, well,
you should probably post about it anddo this and do that. And

(36:46):
I'm like, you know, I'mnot that big of a you know,
let the people speak to I don'twant to just put it out there anyways.
So we made it to the finalfour, right, and we're going
against this uh what do you callit, one of those Mexican markets,
like a Carnissiria market. Yeah.Yeah, it's like a Carnissiria. Yeah.

(37:06):
And they're posting all over the place, pumping votes, just doing this,
doing that. I'm like, ohboy, all right, So I
put out a nice friendly post.I said, hey, you know,
barbecue, you're behind barbecue fans. Please, you know, if you like
us, please give us a youknow, help us vote. Blah blah
blah blah blah. And we crushedit all the way to the championship.

(37:29):
So we were in the championship againstthe business. So the final four,
no, the final eight, thefinal eight was all businesses in Florence,
which is pretty cool. I mean, you know, because Panow County is
huge, you got all you know, it's all over the place. So
we made it to the you know, the eight, so we got to
the final four. Now we're intothe championship. We are going against a

(37:51):
business it's called the Fudge Shop andthey are absolutely fricking amazing. They make
sandwiches, they got fudge, anykind of fudge you need they got and
family, you know, family ownedoperated the whole deal. Very awesome place.
They've been there for fourteen years, massive, huge following. So we're
up against them, bro for thechampionship. So I had to put a

(38:15):
post out to get some votes andsay, look, you vote for us,
I'm gonna put something special on themenu to celebrate, you know,
if we win and bringing home achampionship and blah blah blah blah blah.
So that's that's my dilemma, right, not my dilemma, but that's how
do people vote for you? Soyou can give the photo on your Behind

(38:36):
Barbecue a thumbs up. You canclick on the original post and it's got
one hundred and ninety seven likes andloves. So as we stand right now,
it is ninety one for the Fudgshopand it is a one hundred and
seven for Year Behind Barbecue. Soyou do it. Where do you do
it again? You do it righton Facebook, right on Facebook, on

(38:59):
my page. I put a postout that said, you know, we
need you know, we made itto the championship, we need to win
this. Blah blah blah blah blah. You click on that post and you
can you can vote. But Iknow that sounds kind of bad for me
getting on here kind of promote thatyou got to do, buddy, But
first time business. I really really, really really want to win this.

(39:20):
The whole crew here, the staff, everybody wants to win this. Will
have a big celebration next week ifwe can pull this off. But we're
going against heavy hitters, bro,Like these guys are the town of Florence,
you know what I'm saying. So, but you know, and there's
also people that are like, Ican't vote, Like I'm not voting because
you guys are both amazing. Ican't I'm not voting for you. I
can't vote. So anyways, that'smy dilemma right now. We're working that

(39:45):
out right here live at the restaurant. There you go, buddy, Yes,
sir, that's your dilemma. Well, you'd be good, you'd be
safe, you survive yourself country Thunderhopefully since starting rolling through. So bro,
hope you'll be the first time. You'll be the first one FaceTime,
dude, look at the dump truckon lady sleing some food, get some

(40:05):
photos, posting on social, postup in the restaurant. Man, all
good things coming away. I'm proudof you, brother, Thank you,
sir, Thank you all right, and thank you to Phil for the first
appearance in two episodes. Glad wewere able to steal him for five minutes
out of his busy schedule. Imean, it must be hard being Phil
the grill. But most importantly, thank you to Sonny his wife for coming

(40:27):
on. My gosh, that womandeserves like there should be a Saint Day
or like that all the time.We should like like give her a day,
like I don't know what that daylooks like, but like there's like,
you know, she's a sweetheart, bro, Like yeah, her and
I bonded at Memphis in May becausePhil and Pops had to drive back and
I had to take my ass towork. So Sunday and I stayed an

(40:50):
extra day in Memphis and we wentto the uh where do we go it?
The Elvis Presley whole we went tothat grace, we went to that
whole deal. We had Jamaican foodrank our ass off like it was.
We had a bonding experience and I'mlike, how are you putting up with
Phil? Like what? What's sweetheart? She's awesome, she keeps feeling check.

(41:10):
I love it so all right,Well, thank you everybody, We
appreciate You'll be back next week withyou guys. Thank you. Be safe later.
