Beautiful people. Literally, Christmas is upon us, and what better
a way to slide into Christmas than with the recipe
that my husband was making about three weeks ago when
I picked up my phone and just randomly shot him
doing it less than sixty seconds, uploaded it less than

two minutes and literally went viral within twenty four hours
at over four hundred thousand views. What better a way
to end our Christmas conversation than on that little recipe?
And speaking of little, it is called Little Lemon Cheesecakes.

And buckle up, beautiful people, because this is one that
is going to stay with you well beyond Christmas twenty
twenty five. It serves twelve. It uses a two hundred
gram packet of butter snap biscuits, two hundred and fifty
grand packet of cream cheese, and we've spoke about it.
Buy them in a duo packet, get them on sale.

A two hundred and eighty gram jar of lemon butter
that can be bought in any aisle of your supermarket
where you find your condiments, and a punnet of fresh strawberries.
So butternut snap cookies, cream cheese, lemon butter and strawberries.
And this is how easy. It's that easy. My hobby

was the one making this when I snapped it and
uploaded it and it went viral. So this is one
anyone can make. So you want to get a muffin
tray and line it with ten paddy papers, ten patty shells.
Place your butter nut snap cookie so when you actually
open the packet, you'll see one side of that biscuit

or cookie is really crunchy. The other side, the underside,
is flat. Place your flat your cookie flat side up
in the bottom of your muffin tray. Okay, so you've
got your patty paper, place your cookie flat side up.
Once you've done that, in a large bowl using your

electric beaters, you are going to want to beat together
really well. Your block of cream cheese. Just chop it
up to make it easier to be and your two
hundred and eighty gram jar of lemon butter. Now, before
you ask, yes, you could make your own lemon butter,
but homemade lemon butter is way too nice to use

in this. If you've got oodles of it, totally use
it otherwise for two dollars fifty a jar of lemon butter.
Store bought jar of lemon butter works just as well.
So beat really well together using your electric beaters, your
cream cheese, and your lemon butter until nice and smooth

and velvety. And then you are going to pour that mixture.
You might have to spoon it in because it is
quite a thick mixture, evenly across each of your twelve
butter snap cookies. And then you are going to freeze
this mixture. So this again, remember your freezer loves fat.

Fat doesn't crystallize, so you've got the lemon butter. Lemon
butter is made with butter made with fat, cream cheese,
that but combined, they just create when frozen, this beautiful
lemon creamy, velvety ice cream. So those two ingredients over
your biscuit, evenly distributed, then into your freezer, freeze overnight,

and just before you are ready to serve, bring them out,
remove the patty paper, pop them onto your serving platter
and top with all your fresh strawberries as garnish, so
you've just got that pop of red against the soft,
pale lemon color. You know, the crispiness of the base.
