Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil for frying

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Set up a breading station: In one shallow dish, add the flour. In a second shallow dish, whisk together the eggs. In a third shallow dish, mix the breadcrumbs, Parmesan cheese, salt, and pepper.

  3. Pound each chicken breast to an even thickness of about 1/2 inch (1.25 cm).

  4. Dredge each chicken breast in the flour, shaking off any excess. Then, dip each chicken breast in the egg mixture, letting any excess drip off. Finally, coat each chicken breast in the breadcrumb mixture, pressing the crumbs onto the chicken to help them stick.

  5. In a large skillet, heat about 1/4 inch (0.5 cm) of olive oil over medium-high heat. Once the oil is hot, add the breaded chicken breasts and fry until golden brown and cooked through, about 3-4 minutes per side.

  6. Remove the chicken from the skillet and place on a baking sheet. Spoon about 1/4 cup of marinara sauce on top of each chicken breast, spreading it out evenly. Sprinkle shredded mozzarella cheese on top of each chicken breast.

  7. Bake the chicken in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

  8. Serve hot with a side of pasta or a salad. Enjoy!
