Today we're making a classic comfort food favorite, hearty beef chili con carne. This delicious and filling meal is perfect for a chilly day and is sure to become a staple in your recipe repertoire.

Ingredients:

  • 1 pound ground beef (450g)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz/411g)
  • 1 can kidney beans, drained and rinsed (15 oz/425g)
  • 2 tablespoons tomato paste (30ml)
  • 1 tablespoon chili powder (15ml)
  • 1 teaspoon cumin powder (5ml)
  • 1/2 teaspoon paprika (2.5ml)
  • 1/2 teaspoon dried oregano (2.5ml)
  • 1/2 teaspoon salt (2.5ml)
  • 1/4 teaspoon black pepper (1.25ml)
  • 1 cup beef broth (240ml)
  • 1 tablespoon olive oil (15ml)
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground beef and cook until browned, stirring frequently.
  3. Add onions, bell peppers, and garlic to the pot and sauté until softened.
  4. Add diced tomatoes, tomato paste, chili powder, cumin, paprika, oregano, salt, and black pepper to the pot and stir to combine.
  5. Pour in beef broth and stir well. Bring the chili to a boil, then reduce heat to low and let it simmer for 30-45 minutes, stirring occasionally.
  6. Add the kidney beans to the pot and cook for an additional 10-15 minutes, until the beans are heated through.
  7. Serve hot with your favorite toppings.
