This week on Voices of Taos, join reporter Olivia Lewis as she talks with Adam Medina, sous chef at Ranchos Plaza Grill and instructor for the Taos High School Culinary Arts team.
The Taos High School Culinary and Management Teams both placed first at this year's New Mexico ProStart Invitational, and will be traveling to the National ProStart Invitational in Baltimore, Maryland, to be held May 2–4.
Medina discusses how the students prepare for the competition, and how the team helps prepare them for joining the workforce after high school.
Medina also talks about how the increase in food costs is impacting the culinary arts program. They have had to find creative ways to stretch the budget, including adapting recipes, finding new ones and minimizing food waste.
