In deze SPECIALE aflevering van Van Start tot Ster: On Tour zitten we aan tafel bij Niko Koffeman, medeoprichter en oud-eigenaar van de Vegetarische Slager. Samen met Jaap Korteweg besloot Niko dé oplossing voor vleesvervangers en vegetariërs te creëren: vlees zonder vlees. Door jarenlange toewijding, het aangaan van risico’s en aanzienlijke investeringen, slaagden zij erin om de grootste vleesvervanger van Nederland te worden.
In 2018 verkochten Niko en Jaap hun ‘kindje’ aan Unilever. Maar stilstaan is nooit een optie voor hen. Sindsdien zijn ze verder gegaan met Those Vegan Cowboys, waar ze met behulp van wetenschap hun eigen caseïne ontwikkelen, om zo de vee-industrie verder te ontlasten. Benieuwd naar Niko’s verhaal?
