Halloumi Orzo Tray Bake  

Full of flavourful, vibrant everyday ingredients. This is quick and easy comfort food at its best. We encourage you to swap and change the vegetables with what needs to be used in your fridge and what's seasonal. To make this dairy free, either leave out the halloumi altogether or use a dairy free cheese alternative.  

Serves: 4  

Time: 50 minutes  

1 eggplant, cut into pieces  

1 leek, sliced widthways  

1 red onion, diced  

180g cherry tomatoes, cut in half  

3 cloves garlic, crushed and roughly chopped  

3 tbsp oil  

1 tsp sea salt  

400g can of chopped tomatoes  

3/4 cup water  

3/4 cup orzo  

250g halloumi (half cut into cubes and the other half grated)  

To Serve:  

1/2 cup herbs, roughly chopped  

2 tbsp tahini  

Method:  

Preheat the oven to 220C.  

Add the eggplant, leek, red onion, cherry tomatoes and garlic to a heat proof dish or pan- we used a skillet. Drizzle over the oil and sprinkle over the sea salt. Toss everything together and place in the oven to cook for 30 minutes.  

Remove the dish or pan from the oven and add the tomatoes, water, orzo and the halloumi cubes. Gently toss everything together, then lastly sprinkle over the grated halloumi.  

Place back into the oven to cook for another 20 minutes.  

Remove from the oven once the 20 minutes is up and the halloumi is golden and melted.  

Before serving, top the bake with herbs and drizzle over the tahini.  

Any leftovers will keep in an airtight container in the fridge for up to 4 days.

This is kind of like like autumnal little comfort food.

Eh mm hmm, exactly. I'm all for since then a mum,
I'm all for these that one can oh yeah, chuck
in the oven, quick and easy yet cup putting meals,
and this is exactly that.

Speaker 2 (00:40):
I just reckon. Hallumi's one of those things too. Cherito's
the other one. We just added to any meal and
it just elevates stuff so much like it just you know,
it gives us this a little edge.

Speaker 3 (00:50):
Yeah, any Hallomi recipes we have, they are always they
always go top to the top of the chart. They
are super popular.

Speaker 2 (00:57):
No I'm not surprised, Okay, So run us through it.

Speaker 3 (00:59):
So this recipe to four people. So as I said it,
you literally put everything into a big heatproof dish. I
love using some big cast iron pans skillet situation. So
in the recue. We've got one egg plant cut into
bite white sized chunks, and then we've got one leak
sliced wi ways, and then we've got a red onion,

which you can just dice. In terms of the vigie,
you can use whatever viggies you've got at home, and
then your fridge and watson season. So eggplants they are
still reasonably cheap at the moment. But if you have
pumpkin at home or Comera, or you've got spinel, celery, broccoli, cauliflower,
whatever cabbage, use that instead. So add the eggplant, leak

red onion. We've got some cherry tomatoes there as well.
I know quite a few people getting the last of
the cherious tomatoes out of their glasshouses. You can use those.
If not, you can leave them out, and you can
add some darlic as well. We've got three clothes in there.
To put that all into the heat proof dish. Drizzle
with some oil, sprinkle over your sea salt posts, toss

everything together and then you can place in the oven
to cook for thirty minutes. Once that thirty minutes is up,
add a can of chopped tomatoes. For just any can
of chopped tomatoes three quarters of a cup of water,
three quarters of a cup of orzo, and then some halloomi.
So what we like to do is we like to
do half of the halloomi in little cubes and then

the other half we like to grate on top of everything.

Yeah, yeah, before we.

Speaker 3 (02:34):
Put it back in the oven for twenty minutes, so
it goes all delicious and golden and melted on top.
If you are dairy free, though, and you can't have hallumi,
then you can leave it out all together, or you
can find a dairy free cheese alternative. I also love
adding something like salmon in this, so you can chop
up some salmon into some cubes. You can add some chicken,

you can do pawns, you can do whitefish. There's so
many options, and yeah, pretty much on it's just finished
from the last twenty minutes in the oven. Pull it
out and enjoy and put some herbs on top. I
like drizzling it with some tahini or any of your
favorite dressings. And you can keep it in the French
for up to four days. So grateful work lunches. If

you want to make one and freeze one, you can
absolutely do that as well. It's super freezer friendly, so
just put it in the freezer covered uncooked, and then
you just have to chuck it in the oven after
you pull it up.

Oh fantastic. That sounds so good, just sounds like, yeah,
I reckon, Oh you're having it the next day as well.
A that's a really yeah. Yeah, that would be like
a good little little leftover lunch option. I reckon, make
a double dinner and then aware you go, you know.

Speaker 3 (03:44):
Yeah, be intelligently lazy in the kitchen. And not only
you can, as you said, have some for the next day,
but it takes just as long to make two as
it does to make one, So yeah, why not make
two and freeze one and enjoy one.
