For our Season 4 finale, we sat with Chef Grant Achatz. Achatz is the executive chef and co-owner of Alinea, Next Restaurant, The Aviary cocktail lounge, Roister and St. Clair Supper Club in Chicago, IL. He was named one of Time Magazine's 100 most influential people, James Beard's 'Outstanding Chef of the Year' 2008, one of Food and Wine Magazine's 'Best New Chefs' 2002 and more. Since 2011, Alinea has been awarded 3 stars in the Michelin guide. During this episode, we discuss how his creative mind works, how someone at the top of their game handles criticism, what it's like being a chef diagnosed with tongue cancer, and what dish he misses most from his parents diner growing up in Michigan. He has a self-published book, Alinea, and he and business partner Nick Kokonas co-authored Life on the Line, a memoir about chef Achatz' journey in the restaurant business and his battle with stage four tongue cancer.
