Inden den højgastronomiske restaurant åbnede, havde Morten i årevis trænet med bl.a. smørrebrød på Restaurant Remouladen. Han er hverken kok eller tjener, men grafisk designer, og han går til restauratørrollen på en usædvanlig facon.
