Sopa de Peixe à Portuguesa: Uma Viagem Culinária à Costa Portuguesa

Ingredientes:
  • 1 robalo
  • 1 Dourada
  • ½ tamboril
  • 400 g de camarão (descascado e cabeças reservadas)
  • 3 colheres de pasta de pimento
  • 2 cebolas picadas
  • 2 dentes de alho picados
  • 100 g de massa (pequena para sopa)
  • 3 colheres de azeite
  • Sal e pimenta q.b.
  • Piripiri q.b.
Modo de Preparação:
  1. Cozer as cabeças e cascas do camarão, espinhas do tamboril, pasta de pimento, sal e 1 cebola picada com 2 litros de água.
  2. Num tacho, aquecer o azeite e saltear o alho picado com os camarões descascados durante 3 a 5 minutos.
  3. Retirar os camarões e reservar.
  4. Refogar cebola picada num tacho à parte.
  5. Adicionar a restante pasta de pimento e deixar cozinhar.
  6. Adicionar a água coada do peixe e levar a ferver.
  7. Juntar a massa e deixar cozer durante 10 minutos.
  8. Juntar o tamboril em pedaços e os camarões reservados, retificar o sal e a pimenta.

This rustic and authentic dish warms the soul with the pure flavour of fresh seafood, including sea bass, seabream, and monkfish. It's the perfect recipe for any season, bringing the family together around a dish that is a true cultural heritage.

In this episode, Rosa shares all the secrets to creating a rich and flavorful broth and will guide you step-by-step through the preparation of this iconic recipe, ensuring a final result that is a true celebration of Portugal's traditional flavours.

Ingredients:
  • 1 sea bass
  • 1 seabream
  • ½ monkfish
  • 400 g shrimp (peeled and heads reserved)
  • 3 tbsp red pepper paste
  • 2 chopped onions
  • 2 garlic cloves, chopped
  • 100 g pasta (small soup pasta)
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Piripiri (optional)
Instructions:
  1. Boil shrimp heads, shells, monkfish bones, red pepper paste, salt, and 1 chopped onion in 2 litres of water.
  2. In a pot, heat olive oil and sauté chopped garlic and peeled shrimp for 3 to 5 minutes.
  3. Remove shrimp and set aside.
  4. Sauté chopped onions in a separate pot.
  5. Add the remaining red pepper paste and cook briefly.
  6. Pour in the strained fish broth and bring to a boil.
  7. Add pasta and cook for 10 minutes.
  8. Add the monkfish pieces and reserved shrimp. Add seasoning, if needed.
