Speaker 1 (00:02):
Hey, sweet friends, my name is Chef Schaumburg.
I started my baking businesswith the bottle of DeCerono and
one Bundt Cake Pan.
Fast forward to today, fromnews to magazines, speaking on
national stages and more.
I can truly say that baking haschanged my life.
So now, as a bakery businesscoach, I get to help others have
the same success.
I've helped hundreds of mystudents across the world in my

(00:24):
global membership program createsix-figure businesses, mainly
from home.
The Baking for Business podcastis an extension of that, from
actionable tips to valuabletools and resources that can
impact you as a business owner.
I truly believe y'all.
We would never have been givena gift if we couldn't profit and
prosper from it.
So come on, darling.
What are you waiting for?

(00:45):
Hey, what's going on, sweetfriends?
Chef Schaumburg here, andwelcome back to the Baking for
Business podcast this week.
I am so ecstatic to be with youguys because the past few weeks
we've had a lot of differentguests, which I've been so
grateful for.
You've heard amazing storiesfrom some of my students and

(01:07):
we've had some wonderful people.
But I do love a good soloepisode.
I love when it's just you and I, because we can sit back and
jam, and today's episode hasbeen on my heart for a while.
So today I'm sharing with youguys three money-making products
that every home baker shouldhave in their business and why.

(01:27):
Or treat maker or foodentrepreneurs.
But the reason why I'm sharingthe why is because I think it's
so important.
I know what you're thinking.
You're dying to hear what's shegoing to say.
Is it a heart cake?
Is it a cocoa bomb?
Is it a cake jar?
Like what's that?
One thing that I should diveinto.
But what I'm actually going toshare with you guys is the same

(01:48):
layout that I use in myaward-winning home bakery
business and the same pathwaythat has allowed me to generate
six figures as a home bakerbefore my consulting company.
And the reason why I want youguys to have this is because I
think this information issomething that is missing so
much from our industry.
So now, without any further ado, I'm going to get into the

(02:10):
three products.
Make sure you have pen andpaper, and I would also love to
hear from you guys.
Tag me on Instagram I love whenyou guys tag me and let me know
how this podcast helped andwhat product you're going to be
adding to your baking business.
All right, one of the key thingsI see in a lot of groups is
that whenever bakers are aboutto have a pop-up, they'll say,

(02:31):
hey, you guys, I'm popping uphere, what should I bring?
Or what should I bake?
And someone in California willsay, oh, you should make
strawberries, they're a topseller for me.
Or someone in Texas will say,oh, you should do cookies.
Cookies is the product youshould do, that's a top seller
for me.
And then someone in New Yorkmight say, oh, you should do
cake slices.
I make tons of money with that.

(02:51):
And so people usually pick outtheir products based on other
people's feedback.
Now, there's nothing wrong withthat People are being kind and
they're wanting to help.
But the problem with that isthat if none of those products
align with your brand, then thatcould be one of the reasons why
you find a disconnect in theproducts that you offer

(03:13):
currently, and so these threeitems will help you to possibly
fill in that gap, but alsoexpand as you grow as a home
baker, so that you're notleaving any money on the table,
because I love, love, love foryou guys to have multiple
streams of revenue, all right.
So product number one is what Iactually like to call a dual

(03:35):
product.
The reason why I call this adual product is because it is
something that can be served inthe morning or is something that
can be served in the evening.
Too many bakers they offer aparticular product, and then I
meet a lot of bakers that say, chef, I want to be like you, I
want to bake for corporations.
I see you bake for iHeart Radioand CarMax and how do I get all
those corporate accounts?

(03:56):
And one of the first things Itell them is that, well, you
have to first look at yourofferings.
A dual product is somethingthat can be served in the
morning and in the afternoon, and the reason being is because
a survey based on hourlyioactually stated that most
meetings take place at 10 am,and so what I find with a lot of

(04:17):
my clients is that I'm notserving them my cupcakes and
stuff like that, y'all.
I'm doing a lot of my breakfastboxes.
These are things that consistof cinnamon rolls, croissants,
fruit and stuff like that, andso I want you to look at your
bakery business right now.
If you don't have a dualproduct now, this could be any

(04:38):
particular product, because, again, I'm not giving you
something that worksspecifically for me, you have
your own brand, and so that'sone of the prime reasons why
these are money making productsis because when you stay within
your brand and your own nicheand you stay true to who you are
, it's so much easier to sell.
Think about things such asscones, things such as coffee

(05:00):
cakes, things such as cinnamonrolls, things such as Madeleines
.
These are the type of productsthat we all should be having in
our business muffins, croissants, stuff like that because they
cater to a corporate client ifthey want it to place an order,
which they normally do order forthose early morning hours, and

(05:21):
then also they give your menusome diversity, so that you're
not leaving money on the table.
So the first money makingproduct is a dual item.
It's something that can beserved in the morning as well as
any other time of the day.
The second money making productis a shelf stable product, and

(05:42):
this one is one of my favorites, and the reason why we all need
one of these is because therewill come a time in which we get
booked.
You're doing the grinding, you're doing the marketing,
you're putting yourself outthere, your business is growing,
and then you hit a point andyou're like wow, I would really
like to actually take moreorders, but I just don't have
more time.

(06:02):
And so what shelf stableproducts allow you to do is that
, unlike, let's say, a weddingcake or particularly a dozen
cupcakes, they can be made inadvance and they last for a
while, as well as some of thesedo not even require
refrigeration, so you canactually leave them out.
But as your client places anorder, you can use these shelf

(06:24):
stable products as a up sale, soyou can add it on to any
currently order that the personhas, or you can use these shelf
stable products as a giftableitem.
Now, this is why this is soimportant, because, especially
around the holidays, people arenormally making things for
entertaining and guests, butthey're not thinking about what

(06:44):
product can I make that myclient can actually turn around
and give as a gift?
This is another tip, especiallyin regards to corporate clients
, because corporations theynormally have what's called
birthday club and stuff likethat, and so they're looking to
buy your item and give it totheir employees.
So, shelf stable items, thingssuch as chocolates, barks,

(07:08):
granola mixes, nuts you guys, there are so many things that
are covered under the cottagefruit law that we don't think
about spice, nuts, candy, pecans, things like this that can
actually be made and packagedahead of time.
You can always have them onhand.
Another cool thing about shelfstable products is that I meet

(07:28):
so many cakeers who are like, well, I need a 72 hour notice
and I need this particular typeof notice.
But then I find they're tryingto be full time, and here's the
thing with that.
When you're trying to be fulltime in business, your business
needs to be making money everysingle day.
But most bakers are weekendbakers.
They're only used to doingorders on Thursday, friday,
saturday when people are havingparties, which is another reason

(07:50):
why we go back to number one, where those dual products come
in, because they can fill inthat gap.
Monday through Thursday.
You got a couple of corporateclients.
You do a couple of breakfastboxes, continental platters,
stuff like that.
You now have a little bit ofdiversity and you're not
limiting your coins, honey.
I don't want you just makingmoney on the weekend, because
when you're trying to do thisthing full time, like I do, you

(08:12):
have health insurance.
The bills rise.
All of that is on you, and soI'm not trying to just be a
weekend lover.
With shelf stable products, I'mable to have something on hand.
So if someone finds man, theycall I can easily throw together
a gift box, which is anotheridea.
You can actually take multipleof your shelf stable items.
You can put them together in agift box.

(08:33):
So now, not only do you have aproduct that's giftable, that
you could possibly upsell, butyou also have a product that you
can put in a gift box for asame day order and because it's
shelf stable, because it doesn'trequire any customization, it's
not throwing you off and it'snot throwing your coins off.
Now, hear me when I say this, because some people I know they

(08:54):
catch a hissy fit.
They're like I have to have anotice or there's no way I could
do something same day.
There is a market and I findthere is nothing wrong with same
day.
Of course, obviously, you can'tmake a wedding cake same day
and I don't expect you to do adinosaur or a Paw Patrol cake
same day.
No, but if you had a granolamix and some spice pecans and

(09:15):
some chocolate covered Oreos anda client called and they said,
hey, I'm looking to send a giftto a relative that just died,
you can easily take those shelfstable items.
And yes, I say die, becauseevery single day, people die.
You always have to remember.
As a baker and treat maker, youare not just helping people
celebrate birthdays.

(09:36):
You have to celebrate alloccasions, even when life has
passed, and sympathy gifts areone of the biggest things that
people do not offer in theirbusiness, but it's money that
they leave on the table.
And so, yes, I've had thesecalls where people call, and I
can't tell that person oh, theyshould have died two weeks ago.
I need to notice.
No, so you take your shelfstable items, you put them

(09:56):
together in a gift box and italso allows you to get off of
your feet, so you're not reallyhaving to bake as much.
Chocolate covered Oreos, bark, mondiants, things like this that
do not require much time.
They're able to help youstreamline your processes and
increase production, but alsobecause these things are low

(10:19):
skill level.
Once you start wanting to hirepeople in the business, maybe
your son can help you.
It's so much easier to trainyour son how to do a dozen
gourmet chocolate covered Oreosor chocolate covered pretzels.
There's this company called FatSunday.
They only specialize in dipchocolate covered pretzels and
they do them for corporate gifts, they do them for birthdays,

(10:40):
everything.
It is so much easier for you toteach a teenager how to do a
set of chocolate coveredpretzels than it is for you to
teach them how to do a threelayer cake or a wedding cake, so
that's.
Another really cool thing aboutshelf stable products is that
when you're bringing help alonginto the business because
they're easily able to be taughtthey can be made quicker, and
the more things you have on hand, the more opportunities you

(11:02):
have to fulfill that order.
Also want to talk to you aboutone shelf stable product that a
lot of people look over, thateveryone can do.
Sugar cubes are big and I knowso many of you guys who make
your own vanilla extract, butyou never think to take the
vanilla and actually makegourmet sugar cubes.
In fact, before recording thisepisode, I went ahead and hopped

(11:24):
on Etsy.
There are companies who areselling sugar cubes anywhere
between $16 to $20.
This is perfect because, let'ssay, you do a farmers market and
someone is looking for a gift.
You can take those vanillabeans.
You can infuse them with thesugar that you already have.
For those who don't know what asugar cube is, it's literally
that it's a cube of sugar thatis infused, but it makes a

(11:47):
wonderful gift.
So around the holidays oraround Valentine's Day, you have
this shelf-stable item, especially for all my people who
make their own vanilla extract.
You can use that same item, useyour same packaging.
I don't want you going outthere and investing in tons of
other packaging, but now youhave this product.
That is amazing and people usesugar cubes for their tea, they

(12:10):
use them for their coffee, theyuse them for their cocktail kits
.
So again, that's an item thatyou can add to your home bakery
lineup.
That really doesn't take mucheffort at all.
Literally, you can make it inabout five minutes.
Then think about things such asmixes.
So like pancake mixes, granolamixes, those things are amazing

(12:32):
and people love buying thosethings.
But also, because you can makethem on hand, they can rest for
a while.
So when I say products, this isthe second realm of
money-making productsshelf-stable products.
They're able to be made aheadof time.
There's a way that everyone caninfuse them in their business.
They help you cut down onkitchen time and they allow you

(12:56):
to capitalize on thatlast-minute sale.
So think about some of thoseshelf-stable items.
I do know their laws vary perstate.
Some states are allowed to dochocolate, so don't say oh well,
chef, I can do chocolate, findanother one.
You could probably do a granolamix.
You can do a pancake mix.
You can do the infused line ofsugars.
Trust me, the sky is the limit.

(13:18):
So shelf-stable products is oneof the products that everyone
needs.
The last money-making product isa health-conscious product.
Now, this isn't what you think.
When I say health-conscious,I'm not speaking in terms of
PEDO or anything like that, although that's not a bad thing
to have, but you also want tohave something that's a smaller

(13:38):
quantity.
So one of the things that myclients love is that I offer
mini cupcakes.
So if you're a cupcake-er outthere, instead of offering the
full-size, think about offeringminis Also.
You may find you can make moremoney, because with mini
cupcakes you can charge $2 to $3per mini, which is really
giving you about five or sixbucks on a regular cupcake, and

(14:00):
people love paying that Alsobecause they feel that a mini is
half the size.
In their mind it's kind of likeit's half the portion.
Thank you.
Mini pretzels the company that Imentioned earlier, fat Sunday.
They actually don't even dofull size pretzels.
All of their pretzels aresnapped in half.
I'm like how cool is that?
That way they eliminate waste.

(14:21):
In case any pretzels ever comein and they're broken, every
single pretzel can get used.
But it's also a smaller servingsize.
So that's how they offer ahealth conscious item.
They're taking a regular itemand they're cut it in in half.
So the mini pretzel, the minicupcake for all my people out
there who are treat makers, whodip fruit instead of dipping it,

(14:44):
just slice it up you can havefruit cups.
Fruit cups are amazing becausethey're automatically vegan,
right?
Because they contain no dairy,no meat or anything like that.
If you were to do a fruit cupor let's say, strawberries,
raspberries, blueberries whichberries are naturally low in
sugar that's also a ketofriendly option.
So again, I'm not telling youto break out the xanthan gum and

(15:07):
a coconut flour and learnsomething totally new.
If you wanna do that, that'sfine.
But what I'm saying is, if youcan make small modifications to
the products that you alreadyhave, you're able to position
them in a different way.
I find my clients love minis andthe crazy thing is is when I do
events, I'll sit back and I'llwatch them eat three or four and

(15:28):
I'm like well, you do know it'sno longer a mini, but the mind
doesn't think that way, right?
So the way that we frame it,when it's placed in front of
them, they feel like I'm makinga healthier choice because I'm
making a smaller choice.
Another item I like to do thiswith is with my brownie bites,
especially for my corporateclients.
Rather than offering the fullcut brownies, I use my same

(15:50):
cupcake tin, right, because Idon't like buying tons of
equipment.
I'm not the type of baker thatgets shiny object syndrome.
My storage is alreadyoverflowing and I make miniature
brownie bites and so that waythat is another way that clients
can have something that is asmaller serving and it makes

(16:10):
them feel good.
So think about that in yourbusiness.
For all my cookies out there, Iknow one girl.
She does sugar cookies.
She has all her leftover royalicing and she just makes what's
called dots, and so she makesreal small versions of her sugar
cookies, puts the leftovericing, puts them in a bag and
calls them happy dots and peoplego crazy eating those things,

(16:31):
because some people really doenjoy eating a sugar cookie.
They don't need the technique, they don't need the decoration.
They're like me.
I'm a big girl, I just want acookie.
You don't have to make it.
You know, look like flowers anddaisies or whatever.
I just want to eat it.
Another thing for my artisan andgourmet cookiers is think about
how you can make small versionsof your cookies things such as

(16:54):
chocolate chip, your red velvet, those type of cookies.
Now you can actually take thosecookies and pair them with
sauces Such as Nutella, biscoff, stuff like that, and now you
actually have a cookie dippingoption.
This is also perfect forstocking stuffers, because you
can take smaller versions ofcookies, put them in a
cellophane gift bag I know whatI'm trying to say Put it in a

(17:15):
gift bag, wrap it, and then nowthose miniature versions
actually become a giftableoption.
And so that's another way nomatter what you are, who you
make in this industry that youcan offer a smaller version of
your already selling product inorder to have a healthier
version or alternative to offerto your client.

(17:37):
All right, y'all.
So dual products, shelf-stableproducts, health-conscious
products those are threeproducts that you guys can all
add into your business.
Those are three products that Iuse all the time in order for
you to generate more revenueinto your home baking business,

(18:00):
as well as a little bit moretime.
What I also love about allthree of these items is, if you
also take all three and put themtogether, they make an amazing
gift box, and so gift boxes areone of those things that are
really, really popular, and theycan always be ordered from
either a corporate client orfrom a regular client, because

(18:21):
it's something that your clientcan get and they're able to turn
around and gift it to someoneelse.
So, definitely, I guess I gaveyou four or a bonus, but think
about adding those things intoyour business.
I hope this helped.
Do me a favor.
If you have not already, tag meon Instagram.

(18:41):
I would love to know which oneof these money-making offers are
you going to add to yourbusiness, or which one of these
money-making options are yougoing to start implementing so
that you can see a little bitmore success.
Thank you, guys.
So much for listening.
I appreciate you guys.
So the moon and back.
I hope you have a beautiful day.

(19:03):
I'll talk to you later and byefor now.
What's up you?
