that was sold at auction this week.

of the reasons that there areprice differences in these cheeses
has to do with a couple ofdifferent things.

One, obviously, the aging period.

It's ages longer. A lot oftimes that makes for a more expensive
cheese. The productionprocess, if it's very complex or

labor intensive, it makes thecheese production more costly, and
this affects the final price.

The cheese Bito storico goesfor $150 a pound, and it's aged for
10 years.

There's another reason whycheese would be very expensive, and
it can be from the type ofmilk. One of the rarest cheeses in
the world comes from moose milk.

It takes a lot to milk amoose, and each moose only gives

a little bit of milk everyday. And this process only goes on
from May to September. So themilking season is very short. It's
very rare. There are very fewproducers like the Johansson family
in Swed, and it only yieldsabout 500 pounds a year. All of this
complexity makes the cost perpound about $455.

But the most expensive milk inthe world is made from donkey milk.
It's called Pule cheese. Theysay here it takes about a little
over six gallons of donkeymilk for two pounds of cheese. These
donkeys are kept in a specialnature reserve in Serbia. Donkey

for this process. And thehistory of this cheese is pretty

Balkan donkeys from farms, andhe placed them in a nature reserve.

benefit. It's believed to bean immune booster as well as good

end up with extra milk. And hethought, why not make cheese with
it?
