Mark (my favorite person) joins me today to talk about MEAT (and mainly test the video recording in the studio).
We talk about his experiences with Texas-style smoked brisket - making it, eating it, serving people with meals - all of it. Then we get into the reason he loves food and is an intuitive chef. He talks about how his grandmother taught him cooking techniques and how his father smoked pig Filipino-style, Lechon, for family gatherings and customers.
