As well as talking about his own experience and why he never got an official coeliac disease diagnosis, David also gave us a great insight into exactly what goes into bringing a gluten free product to market. We chatted about how long it takes to develop an idea into a product, sourcing safe manufacturing space, the cost of gluten free food and the growth of the free from and vegan markets.
