jenny-gomes_1_05-29-2025_ (01:25):
Okay, so before we hit record, we were
talking about herbs and

_1_05-29-2025_102613 (01:28):
so before we could record, we.

jenny-gomes_1_05-29-2025_0 (01:29):
easy Are to preserve

_1_05-29-2025_102613 (01:31):
and

jenny-gomes_1_05-29-2025 (01:31):
useful they

_1_05-29-2025_102613 (01:32):
how easy they're to preserve
Preservation.

jenny-gomes_1_05-29-2025_09 (01:35):
out there may not know that Anna is

_1_05-29-2025_102613 (01:37):
Those of you out there may not know that
Anna is also a master gardener.

jenny-gomes_1_05-29-2025_0926 (01:41):
I was raised with

_1_05-29-2025_102613 (01:42):
I'm a novice gardener.
I was raised with a familygarden, but

jenny-gomes_1_05-29-2025_09 (01:46):
big garden myself,

_1_05-29-2025_102613 (01:46):
I've never had

jenny-gomes_1_05-29-20 (01:48):
learning from Anna.

_1_05-29-2025_102613 (01:48):
a very big garden myself, so I'm learning
and learning from Anna.

jenny-gomes_1_05-29-2025_09 (01:52):
use

_1_05-29-2025_102613 (01:52):
Anna that the way that I use herbs

jenny-gomes_1_05-29-2025_092 (01:55):
At least

_1_05-29-2025_102613 (01:55):
on the regular as.

jenny-gomes_1_05-29-2025_09 (01:57):
use herbs in my baking, which seems
so strange.
Or

_1_05-29-2025_102613 (02:00):
herbs in my thinking, which seems so
strange, or Anna said she thatwas a little bit unusual maybe.
And I guess you guys

jenny-gomes_1_05-29-2025_0 (02:06):
but,

_1_05-29-2025_102613 (02:07):
let us know this is how you use herbs
or not.
But I'm a big fan of my breadmachine.
I love.

jenny-gomes_1_05-29-2025_092 (02:12):
so helpful in helping me

_1_05-29-2025_102613 (02:14):
I think they're so helpful in helping me
make more homemade bake things,

jenny-gomes_1_05-29-2025_0 (02:20):
once a week I

_1_05-29-2025_102613 (02:21):
very often, probably once a week

jenny-gomes_1_05-29-2025_092 (02:24):
in the bread

_1_05-29-2025_102613 (02:24):
I will use all,

jenny-gomes_1_05-29-2025_09 (02:26):
let it

_1_05-29-2025_102613 (02:26):
the ingredients,

jenny-gomes_1_05-29-2025_0 (02:27):
I'll go out

_1_05-29-2025_102613 (02:28):
I'll

jenny-gomes_1_05-29-2025_0 (02:28):
with one pair of

_1_05-29-2025_102613 (02:29):
let it get started mixing all, go out with
one pair,

jenny-gomes_1_05-29-2025_09 (02:33):
And like

_1_05-29-2025_102613 (02:34):
Rosemary,

jenny-gomes_1_05-29-2025_09 (02:35):
are going crazy, so

_1_05-29-2025_102613 (02:36):
and

jenny-gomes_1_05-29-2025_0 (02:37):
walk back in, give them a rinse, and
then just stand over the

_1_05-29-2025_102613 (02:40):
Just

jenny-gomes_1_05-29-202 (02:40):
machine

_1_05-29-2025_102613 (02:40):
walk back in, give them a rinse, and then
just stand over the breadmachine while it's mixing

jenny-gomes_1_05-29-2025_092 (02:45):
of

_1_05-29-2025_102613 (02:45):
and just snip off

jenny-gomes_1_05-29-2025_ (02:47):
herb,

_1_05-29-2025_102613 (02:47):
little itty bitty snips

jenny-gomes_1_05-29-2025_0 (02:48):
then

_1_05-29-2025_102613 (02:48):
of those herbs

jenny-gomes_1_05-29-2025_0 (02:49):
into

_1_05-29-2025_102613 (02:49):
whatever, herbs, whatever it was.
I just grabbed right that

jenny-gomes_1_05-29-2025_092 (02:51):
so

_1_05-29-2025_102613 (02:52):
into the dough and it just makes the
bread dough

jenny-gomes_1_05-29-2025_0926 (02:54):
I end up

_1_05-29-2025_102613 (02:55):
so flavorful.

jenny-gomes_1_05-29-2025 (02:56):
making

_1_05-29-2025_102613 (02:56):
It makes it so that whatever I end up
putting on it.

jenny-gomes_1_05-29-202 (02:59):
pizzas,

_1_05-29-2025_102613 (02:59):
I'm making like aone or like I'll make
pizza like two pieces for myfamily.
Or

jenny-gomes_1_05-29-2025_0926 (03:05):
I did this a lot

_1_05-29-2025_102613 (03:06):
sometimes I do bread and twist.

jenny-gomes_1_05-29-2025_092 (03:07):
we were gonna

_1_05-29-2025_102613 (03:07):
If we're going, I did this a lot during
like football, we watch,

jenny-gomes_1_05-29-2025_ (03:10):
just, it would just be the

_1_05-29-2025_102613 (03:12):
make,

jenny-gomes_1_05-29- (03:12):
basically.

_1_05-29-2025_102613 (03:13):
And then.

jenny-gomes_1_05-29-2025_ (03:13):
makes it so flavorful.
It just really makes it

_1_05-29-2025_102613 (03:15):
so flavorful.
It just really makes it

jenny-gomes_1_05-29-2025_ (03:17):
super easy.

_1_05-29-2025_102613 (03:18):
a lot better and

jenny-gomes_1_05-29-2025_0926 (03:20):
I don't know if everyone

_1_05-29-2025_102613 (03:21):
super easy.

jenny-gomes_1_05-29-202 (03:21):
putting their Sauce, like

_1_05-29-2025_102613 (03:22):
I dunno if everyone else has just put their
herbs in the, and I have neverdone that.
I don't know.
I guess when I was doingsourdough I would do what's
called inclusions and I wouldadd things like nuts or seeds or
whatever.
And sometimes I would dorosemary, but like I never think
about putting it in my pizzadough.
And that's so smart, especiallyfresh herbs because it imparts

(03:45):
so much great flavor.

jenny-gomes_1_05-29-2025_0926 (03:48):
I honestly was surprised.
I was like, dang, that made thata lot better.
And it's better than, or more

_1_05-29-2025_102613 (03:55):
A lot better than, or more flavorful
than

jenny-gomes_1_05-29-2025_0 (03:59):
It's more

_1_05-29-2025_102613 (04:00):
if I,

jenny-gomes_1_05-29-2025_ (04:00):
than.

_1_05-29-2025_102613 (04:01):
before they.

jenny-gomes_1_05-29-2025_0 (04:01):
it's good in the sauce.
The sauce is good, but the sauce

_1_05-29-2025_102613 (04:05):
Good in the sauce.
The sauce is good,

jenny-gomes_1_05-29-2025_09 (04:07):
The

_1_05-29-2025_102613 (04:07):
but the sauce is not all throughout.
The tomato sauce is just on thesurface.
Yeah.
So I feel like in terms of justmaking the whole

jenny-gomes_1_05-29-2025_09 (04:15):
the

_1_05-29-2025_102613 (04:16):
of the bread

jenny-gomes_1_05-29-2025_092 (04:17):
is very

_1_05-29-2025_102613 (04:18):
better, the herb inclusion is very good.

jenny-gomes_1_05-29-2025_0 (04:21):
Just something I think

_1_05-29-2025_102613 (04:22):
so

jenny-gomes_1_05-29-2025_ (04:22):
could add to their

_1_05-29-2025_102613 (04:24):
just something I think that our
listeners could add to theirlist of things.
To maybe test out or try out.

jenny-gomes_1_05-29-2025_0926 (04:29):
I Like you could

_1_05-29-2025_102613 (04:30):
do you wanna start by talking about
growing herbs?
I just feel like we could add alot of

jenny-gomes_1_05-29-2025_09 (04:34):
how easy herbs can

_1_05-29-2025_102613 (04:35):
wisdom to our listeners for

jenny-gomes_1_05-29-2025_092 (04:36):
in

_1_05-29-2025_102613 (04:37):
just how easy herbs can be in a pot.
They can be in

jenny-gomes_1_05-29-2025_09 (04:40):
the very first

_1_05-29-2025_102613 (04:40):
the little

jenny-gomes_1_05-29-2025_ (04:41):
grow.

_1_05-29-2025_102613 (04:42):
in your garden.
They can be the very first thingyou ever Sure.
And I do have to make adisclaimer that I, even though I
did do the Master Gardenercourse, I am still learning
every single year how to growbetter.
And one of the things that.
I love growing.
As far as herbs go are the onesthat are perennials.

(05:04):
That means they come back yearafter year.
You don't really have to babysitthem.
They're pretty unfussy and I'lltalk about some of my favorite
varieties, but there, there is adifference in herbs between
they're growing conditions whatthey like.
That could be.
Lavender, loving thatMediterranean hot, dry summer

(05:24):
versus maybe some of your tendercrops like basil.
Basil for me is notoriouslyfinicky.
I live here in the IntermountainWest, which means it's a high
desert.
And if I am not watering mybasal quite a bit, it turns dry
and not as tender.
So really look at the back ofthat tag when you're purchasing

(05:47):
herbs and figure out what thegrowing conditions are needed
for herbs.
Most herbs do drained soilthough, so keep that in mind.
Don't plant them in a clay richsoil.
I actually recommend peopleeither have garden boxes or,
grow bags or pots for theirherbs just because the drainage

(06:10):
is so good in a pot.

jenny-gomes_1_05-29-2025_0 (06:12):
Yeah it's

_1_05-29-2025_102613 (06:13):
That's some of the growing conditions.
Yeah.
What do you like to grow?
Jenny?
Jenny is in Northern California.

jenny-gomes_1_05-29-2025_092 (06:22):
So it's, think of it more

_1_05-29-2025_102613 (06:23):
so it's, think of it more

jenny-gomes_1_05-29-2025_09 (06:25):
not California, like the beach, but
California more like

_1_05-29-2025_102613 (06:28):
not California, like the beach, but
California more like

jenny-gomes_1_05-29-2025_092 (06:31):
to eastern

_1_05-29-2025_102613 (06:32):
Eastern or Eastern Oregon climate.
But

jenny-gomes_1_05-29-2025_09 (06:35):
not by a lot.

_1_05-29-2025_102613 (06:36):
so I probably need a little bit more
rain than Canada, but not.

jenny-gomes_1_05-29-2025_09 (06:38):
bed that I have, and the bed is
shallow, it's, it is, I beteight inches deep, not deep at
all.
I have

_1_05-29-2025_102613 (06:44):
I at eight inches deep.
Not deep at all.
I have

jenny-gomes_1_05-29-202 (06:47):
chives.
They're next door to each

_1_05-29-2025_102613 (06:49):
loving chives.
They're next door to each otherand with

jenny-gomes_1_05-29-2025_09 (06:54):
all are doing

_1_05-29-2025_10261 (06:56):
gangbusters gr together

jenny-gomes_1_05-29-202 (06:57):
potting

_1_05-29-2025_102613 (06:57):
because they love that

jenny-gomes_1_05-29-2025 (06:58):
That's an

_1_05-29-2025_102613 (06:59):
good draining potty.

jenny-gomes_1_05-29-2025_09 (07:00):
but the soil I have here.
I'm in mining country, so

_1_05-29-2025_102613 (07:04):
soil I have here.

jenny-gomes_1_05-29-2025_09 (07:05):
are

_1_05-29-2025_102613 (07:05):
I'm in mining country, so a lot of our
soils are really poor

jenny-gomes_1_05-29-2025_0926 (07:09):
a good way to

_1_05-29-2025_102613 (07:10):
after the dredging process has gone
through and there's not a goodway to remedy that.

jenny-gomes_1_05-29-2025_0 (07:13):
beds are go-to

_1_05-29-2025_102613 (07:14):
Oh, interesting.

jenny-gomes_1_05-29-2025_ (07:15):
Yeah, it's a

_1_05-29-2025_102613 (07:16):
are for my area.
Yeah.
It's a bummer.

jenny-gomes_1_05-29-2025_0 (07:18):
even Is pretty small, they

_1_05-29-2025_102613 (07:19):
it's just super successful even though
the.

jenny-gomes_1_05-29-2025 (07:22):
Wasn't sure how much deer pressure I
would have with

_1_05-29-2025_102613 (07:25):
Wasn't sure how much deer pressure I
would have with no fence.

jenny-gomes_1_05-29-2025_ (07:29):
doing

_1_05-29-2025_102613 (07:29):
We do have a new dog, a young dog who's

jenny-gomes_1_05-29-202 (07:32):
planted

_1_05-29-2025_102613 (07:32):
doing her job in terms of keeping the
away, but

jenny-gomes_1_05-29-2025_0 (07:34):
that I thought the deer

_1_05-29-2025_102613 (07:35):
I planted the Chis in among the other
things I thought the deer wouldlike.

jenny-gomes_1_05-29-2025_09 (07:39):
And I actually have some

_1_05-29-2025_102613 (07:40):
So as to.
De

jenny-gomes_1_05-29-2025_09 (07:41):
and among all

_1_05-29-2025_102613 (07:42):
and I actually have some strawberries
just

jenny-gomes_1_05-29-2025_09 (07:43):
and that's

_1_05-29-2025_102613 (07:44):
great in and among all that, which
doesn't really go thematicallyand that's

jenny-gomes_1_05-29-20 (07:47):
together and I also

_1_05-29-2025_102613 (07:48):
but

jenny-gomes_1_05-29-2025_0 (07:48):
some pretty

_1_05-29-2025_102613 (07:49):
all those are doing great together.
And I also planted a pretty,very pretty

jenny-gomes_1_05-29-2025_092 (07:52):
It

_1_05-29-2025_102613 (07:52):
sage.

jenny-gomes_1_05-29-2025_ (07:53):
nice,

_1_05-29-2025_102613 (07:53):
Oh, nice.
It looks very nice.
Smells nice.

jenny-gomes_1_05-29-2 (07:56):
actually.

_1_05-29-2025_102613 (07:57):
Right next to my chicken run actually.

jenny-gomes_1_05-29-2025_092 (07:59):
is it A whole lot of pests?

_1_05-29-2025_102613 (08:01):
Is it really gonna turn, deter.
Pet, maybe not, but it'scertainly not gonna hurt
Notoriously don't like

jenny-gomes_1_05-29-2025_ (08:07):
those

_1_05-29-2025_102613 (08:07):
those,

jenny-gomes_1_05-29-2025_0 (08:08):
they They supposedly

_1_05-29-2025_102613 (08:09):
many herbs and those specifics, they don't,
basically

jenny-gomes_1_05-29- (08:12):
successful for

_1_05-29-2025_102613 (08:13):
don't.
Yeah.
So far that has just been supersuccessful.

jenny-gomes_1_05-29-2025 (08:16):
herbs.
I feel like when we talk

_1_05-29-2025_102613 (08:17):
Tell us more about the tender herbs.
I feel like when we talk abouttender herbs, I think of in
every grocery store in Americaright now, you can buy a little,
little tiny pot with a super

jenny-gomes_1_05-29-2025_ (08:26):
those are

_1_05-29-2025_102613 (08:26):
tall base lemon.
Yes.

jenny-gomes_1_05-29-2025_0 (08:28):
It's like you're

_1_05-29-2025_102613 (08:29):
Are Destin,

jenny-gomes_1_05-29-2025_09 (08:30):
and you're gonna snip up those
leaves and then you're never

_1_05-29-2025_102613 (08:32):
it's like you're gonna go home and you're
gonna snip off those leaves Iknow.
The, not only are the leavesperfect for photosynthesis, but
once you start snipping off aton of those, and unless they're
in like direct sun and they'regetting decent nutrient from the
soil, they.
They just don't stand a chance.
But I have seen people re-potthose grocery store basil plants

(08:53):
and in new potting soil they canget pretty happy.
And as long as you're not toobrutal.
I with your pruning, they canlast for a long time and they
can even branch off as you startcutting away at it.
But I would recommend that youcut it right.
Above like a set of leaf nodes.
Don't cut when there's justnothing left on that stem

(09:15):
because it won't grow back.
It does need some leaves forsome photosynthesis if you plan
on keeping it in your kitchenand growing it for a while.

jenny-gomes_1_05-29-2025_ (09:25):

rosemary, the time.
The chives, those

The rosemary, the

Rose,

jenny-gomes_1_05-29-2025_09 (09:33):

_1_05-29-2025_102613 (09:34):

They're very happy when you dowater them, but they're pretty

jenny-gomes_1_05-29-2025_0 (09:38):
mint

_1_05-29-2025_102613 (09:39):
Whereas basil

jenny-gomes_1_05-29-2025_0 (09:41):
I've

_1_05-29-2025_102613 (09:41):
is like mint levels of water.

jenny-gomes_1_05-29-2025_0 (09:43):
much water, twice as

_1_05-29-2025_102613 (09:44):
Yeah.

jenny-gomes_1_05-29-2025_0 (09:45):
It's a little bit harder.

_1_05-29-2025_102613 (09:46):
I am growing some new to me herbs
this year, including.
Lemon Verina, which I cannotrecommend enough for your peach
jam.
Throw some lemon verina choppedleaves in there and you will
die.
It tastes so good.

jenny-gomes_1_05-29-2025_09 (10:03):
Ah.

_1_05-29-2025_102613 (10:04):
And then I'm also growing some Fenig
Greek, some lemon basil, obviously regular basil.
I started from seed and some.
Lavender.
So those are the new herbs thatI'm growing this year and I'm
interested to see how it will do

jenny-gomes_1_05-29-2025_0 (10:22):
That all sounds so amazing.
I

_1_05-29-2025_102613 (10:23):
that all sounds so amazing.

jenny-gomes_1_05-29-2025_0 (10:25):
Feel like dill is fun.
I

_1_05-29-2025_102613 (10:26):
grow,

jenny-gomes_1_05-29-2025_09 (10:27):
are always so

_1_05-29-2025_102613 (10:28):
I feel

jenny-gomes_1_05-29-2025_092 (10:28):
by dill.
'cause it's

_1_05-29-2025_102613 (10:29):
are

jenny-gomes_1_05-29-202 (10:29):
looking and

_1_05-29-2025_102613 (10:30):
by, because

jenny-gomes_1_05-29-2025_09 (10:31):
the seeds are fun and it just is a
magical looking plant.
When they were, they're a littlebit older now, they're

_1_05-29-2025_102613 (10:37):
Yeah.

jenny-gomes_1_05-29-20 (10:38):
Preteen.
My kids are teens and earlyteens and preteen.
But when

_1_05-29-2025_102613 (10:41):
My kids are

jenny-gomes_1_05-29-2025 (10:42):
really loved

_1_05-29-2025_102613 (10:42):
early teens.

jenny-gomes_1_05-29-2025_09 (10:43):
and those

_1_05-29-2025_102613 (10:44):
But when they were little, they really
loved plants and

jenny-gomes_1_05-29-2025 (10:46):
easily

_1_05-29-2025_102613 (10:46):
are easy.

jenny-gomes_1_05-29-2025 (10:47):
useful in

_1_05-29-2025_102613 (10:48):
like they grew very easily and

jenny-gomes_1_05-29-2025_092 (10:50):
of

_1_05-29-2025_102613 (10:50):
super beautiful.

jenny-gomes_1_05-29-2025_09 (10:51):
jar of pickles or dly

_1_05-29-2025_102613 (10:52):
a big head of

jenny-gomes_1_05-29-2025_092 (10:54):
so

_1_05-29-2025_102613 (10:54):
in your jar pickles or beans.
Oh, it's gorgeous.
So much Wow, so much flavor.

jenny-gomes_1_05-29-2025_0 (10:59):
Even if you it, you could just snip
it

_1_05-29-2025_102613 (11:01):
Even if you never cooked with it

jenny-gomes_1_05-29 (11:02):
structural,

_1_05-29-2025_102613 (11:03):
snippet and put it your bouquet, it's
just very structural, pretty.
Yeah, absolutely.
I think Dill is one of thosemagical plants that has almost
like a feather like qualitywhere it blows in the breeze
It's.
Fennel also has that.
Yeah, I love those.

jenny-gomes_1_05-29-2025_09 (11:22):
but it has that same kind of

_1_05-29-2025_102613 (11:24):
I've Yeah.
It's super similar.

jenny-gomes_1_05-29-2025_09 (11:26):
oh, fun.
hopefully you've been convincedthat growing herbs

_1_05-29-2025_102613 (11:31):
before you've been,

jenny-gomes_1_05-29-2025_09 (11:32):
'em in pots, you

_1_05-29-2025_102613 (11:33):
the growing herbs is easy to do them
in pot.
You can do them in,

jenny-gomes_1_05-29-2 (11:36):
doorstep, wherever

_1_05-29-2025_102613 (11:37):
beds.
You can grow em right in

jenny-gomes_1_05-29-2025_0 (11:38):
just you

_1_05-29-2025_102613 (11:39):
wherever you find a little spot.
Just to be sure that you

jenny-gomes_1_05-29-2025_09 (11:42):
and how

_1_05-29-2025_102613 (11:43):
look at

jenny-gomes_1_05-29-2025_ (11:43):
need.

_1_05-29-2025_102613 (11:44):
good drainage and then how much water
and how much sun they need.

jenny-gomes_1_05-29-2025_0 (11:47):
Well suited for a spot that you have,

_1_05-29-2025_102613 (11:48):
but you could find an her that's
probably well

jenny-gomes_1_05-29-2025 (11:50):
thing.

_1_05-29-2025_102613 (11:51):
spot

jenny-gomes_1_05-29-2025_ (11:51):
think

_1_05-29-2025_102613 (11:51):
that you have, and you can even do

jenny-gomes_1_05-29-2025_09 (11:52):
the

_1_05-29-2025_102613 (11:53):
just be aware that

jenny-gomes_1_05-29-2025_0 (11:54):
with other herbs and

_1_05-29-2025_102613 (11:55):
I feel like the, like basil gets lumped
in with other herbs and it just,it like a much wetter situation.
It's a little bit

jenny-gomes_1_05-29-2025_ (12:02):
other ones.
I feel

_1_05-29-2025_102613 (12:03):
not finicky, a little trickier.
Some Of the other

jenny-gomes_1_05-29-2025_0 (12:05):
have to work

_1_05-29-2025_102613 (12:06):
Rosemary is,

jenny-gomes_1_05-29-2025 (12:06):
plant.
They are very

_1_05-29-2025_102613 (12:08):
You

jenny-gomes_1_05-29-2025_0 (12:08):
feel like.

_1_05-29-2025_102613 (12:08):
have to work hard to sell a rosemary.
They are very hardy, I feellike.
Bases

jenny-gomes_1_05-29-2025_09 (12:12):
but

_1_05-29-2025_102613 (12:13):
that way.

jenny-gomes_1_05-29-2025 (12:13):
beyond Them, let's talk about how to
preserve them because

_1_05-29-2025_102613 (12:16):
beyond planting them, let's talk about
how to preserve them becausethey could be rock stars

jenny-gomes_1_05-29-2025_0926 (12:21):
a

_1_05-29-2025_102613 (12:22):
in your kitchen and so much more.
Tell us why a person

jenny-gomes_1_05-29-2025_ (12:25):
Anna.

_1_05-29-2025_102613 (12:26):
go.
There's one really main reasonfor me, and that is that the
grocery store herbs that you aregetting are probably, they can
be up to four years old.
And the longer that a dried herbsits, the loss in aromatic smell
and flavor happens.
And so for me, drying herbs athome allows me to have.

(12:48):
Very fresh tasting herbs.
And for me, that's just key.
If you love food you wanna getit when it's either at peak
harvest or in the best way ofpreserving.
There's a few different ways wecan preserve herbs.
Jenny, what is your favorite wayI think that,

jenny-gomes_1_05-29-2025_0 (13:07):
ways freezing I feel like

_1_05-29-2025_102613 (13:10):
there's so many ways.
Freezing I feel like is just,

jenny-gomes_1_05-29-2025_092 (13:13):
to can everything

_1_05-29-2025_102613 (13:14):
since we're in the crowd of canning,
everybody wants to caneverything.

jenny-gomes_1_05-29-2025_ (13:17):
might be If

_1_05-29-2025_102613 (13:18):
and I think that

jenny-gomes_1_05-29-202 (13:19):
because

_1_05-29-2025_102613 (13:20):
might be the pointing, if that's

jenny-gomes_1_05-29-2025_0926 (13:21):
a

_1_05-29-2025_102613 (13:21):
your philosophy because

jenny-gomes_1_05-29-2025_092 (13:23):
is such a

_1_05-29-2025_10261 (13:23):
dehydrating is such a.

jenny-gomes_1_05-29-2025_0 (13:25):
some herbs are best frozen, and

_1_05-29-2025_102613 (13:28):
Somes

jenny-gomes_1_05-2 (13:28):
specifically

_1_05-29-2025_102613 (13:29):
are best

jenny-gomes_1_05-29-2025_09 (13:30):
and

_1_05-29-2025_102613 (13:30):
frozen, and those

jenny-gomes_1_05-29-2025_09 (13:31):
you

_1_05-29-2025_1026 (13:32):
specifically would be basal and

jenny-gomes_1_05-29-2025_09 (13:33):
for

_1_05-29-2025_102613 (13:33):
d.

jenny-gomes_1_05-29-202 (13:34):
seconds before

_1_05-29-2025_102613 (13:35):
blanch them in boiling water for 45
seconds.
The order padding them dry andthen

jenny-gomes_1_05-29-2025_09 (13:40):
mix

_1_05-29-2025_102613 (13:40):
freezing them.

jenny-gomes_1_05-29-2025_092 (13:41):
or

_1_05-29-2025_102613 (13:41):
You also can mix them with oil or butter
or other condiments like apesto.

jenny-gomes_1_05-29-2025_092 (13:46):
of carrot

_1_05-29-2025_102613 (13:47):
I

jenny-gomes_1_05-29-2025_09 (13:47):
and

_1_05-29-2025_102613 (13:48):
made pesto.

jenny-gomes_1_05-29-2025_0 (13:49):
cal.
This is probably the mostCalifornia thing I've ever said.
Carrot tops, pumpkin seeds,

_1_05-29-2025_102613 (13:55):
Pumpkin seed,

jenny-gomes_1_05-29-2025_09 (13:57):
and basil, the

_1_05-29-2025_102613 (13:58):
good farm.

jenny-gomes_1_05-29-2025_09 (13:59):
And that jar, I made several

_1_05-29-2025_102613 (14:02):
pesto.

jenny-gomes_1_05-29-2025_0 (14:02):
jars of

_1_05-29-2025_102613 (14:03):
that jar.

jenny-gomes_1_05-29-202 (14:04):
Fridge, and it lasted.

_1_05-29-2025_102613 (14:06):
colors of it, and kept it in the back of
my fridge and it left.

jenny-gomes_1_05-29-2025_092 (14:09):
so

_1_05-29-2025_102613 (14:09):
it took me two years

jenny-gomes_1_05-29- (14:11):
flavorful,

_1_05-29-2025_102613 (14:11):
eat, but it was Wow.
So good,

jenny-gomes_1_05-29-2025_092 (14:13):
if you just keep it good and

_1_05-29-2025_102613 (14:14):
so flavorful, so delicious.

jenny-gomes_1_05-29-2025_0 (14:16):
when

_1_05-29-2025_102613 (14:16):
If you just keep it cold

jenny-gomes_1_05-29-2025_0 (14:17):
it's gonna

_1_05-29-2025_102613 (14:18):
and use a clean UIL when you spoon outta
it.
A very long time and it was, ittaste

jenny-gomes_1_05-29-2025 (14:22):
didn't

_1_05-29-2025_102613 (14:23):
so fresh, that was what was,

jenny-gomes_1_05-29-2025_0 (14:25):
from the

_1_05-29-2025_102613 (14:25):
that it didn't taste

jenny-gomes_1_05-29-2025_ (14:26):
12th.

_1_05-29-2025_102613 (14:27):
any different from the first month
to the 12th.

jenny-gomes_1_05-29-2025_0 (14:30):
good to know

_1_05-29-2025_102613 (14:31):
Very good.

jenny-gomes_1_05-29-2025_09 (14:31):
you

_1_05-29-2025_102613 (14:32):
So it's good to know which herbs you
want and which you want.

jenny-gomes_1_05-29-2025_ (14:36):
about the dehydrated ana.

_1_05-29-2025_102613 (14:37):
All right.
The dehydrator is one of myfavorite tools.
I actually am drying some herbsright now.
I have lage we didn't reallytalk about this yet, but Lage is
an amazing perennial herb that afriend gave me.
A start from probably, ooh, Iwanna say six years ago.
And each year I watch it come upand I just don't really do

(15:02):
anything with it.
And I thought, you know what?
This is ridiculous.
So I decided to cut some of thestems, and it's very similar
looking to celery and parsley,so it almost looks like a cross
between the two.
And the flavor is very similarto a spicy celery.

(15:24):
Parsley.
And I don't mean spicy like hot, spicy like arugula is spicy

jenny-gomes_1_05-29-2025_ (15:29):
Yeah.

_1_05-29-2025_102613 (15:30):
and it's just.
Fantastic.
So I'm drying it.
I'm going to chop it a littlebit in my food processor and
then you can add it to soups andstews.
It's very popular in England,Eastern Europe.
I was looking at recipes andthere were some from Romania and
Bulgaria and Germany.

(15:51):
And the great thing about Lovetis that I have never watered
that plant, and it's alreadythree feet tall.
Never, I've never watered thatthing.
And we get really hot summersdry

jenny-gomes_1_05-29-2 (16:06):
anything.

_1_05-29-2025_102613 (16:07):
black.

jenny-gomes_1_05-29-2025_0 (16:07):
like a trusty barn.
Cat doesn't need you foranything.

_1_05-29-2025_102613 (16:10):
Exactly.
And it's probably thanks forpruning me.
That's really great.
Yeah, I'm dehydrating that rightnow.

jenny-gomes_1_05-29-20 (16:17):
Amazing.
I've never even, I've never eventhought of growing that.
That's

_1_05-29-2025_102613 (16:20):
Amazing.
I've never even, I've never eventhought of growing up.
That's amazing.

jenny-gomes_1_05-29- (16:23):
listeners,

_1_05-29-2025_102613 (16:24):
clearly need to add that.

jenny-gomes_1_05-29-2025_092 (16:25):
if

_1_05-29-2025_102613 (16:25):
Do you know what we didn't say for our
listeners?

jenny-gomes_1_05-29-2025 (16:27):
What's the

_1_05-29-2025_102613 (16:28):
if you are wondering quietly yourself,
wait,

jenny-gomes_1_05-29-2025_09 (16:30):
buy

_1_05-29-2025_102613 (16:30):
what's the difference between the annual
and

jenny-gomes_1_05-29-2025_0 (16:32):
once and

_1_05-29-2025_10261 (16:32):
perennials?
You buy once

jenny-gomes_1_05-29-2025_09 (16:34):
and

_1_05-29-2025_102613 (16:34):
or plant them once and then they just.

jenny-gomes_1_05-29-2 (16:36):
Something that will live one season,
they'll be

_1_05-29-2025_102613 (16:39):
It's something that will live

jenny-gomes_1_05-29-2025_09 (16:40):
And

_1_05-29-2025_102613 (16:41):
they'll and then that's

jenny-gomes_1_05-29-2025_0 (16:42):
just a decision I guess you make
based on what Needs are

_1_05-29-2025_102613 (16:45):
it's just a decision I guess, you make
based on what you're growingneeds are or what you wanna do.
I personally Am

jenny-gomes_1_05-29-2025_ (16:51):
want,

_1_05-29-2025_102613 (16:52):

jenny-gomes_1_05-29-2025_092 (16:59):

I go to the store and get

jenny-gomes_1_05-29-2025_092 (17:13):
in her

_1_05-29-2025_102613 (17:13):
her flowers for the year

jenny-gomes_1_05-29-2025_0 (17:14):
Some people love that and it's sweet
and it's

_1_05-29-2025_102613 (17:17):
people.

jenny-gomes_1_05-29-2025_092 (17:18):
If that's what you wanna do it.
But just know

_1_05-29-2025_102613 (17:20):
Great.
And that's what you wanna do it.
But just know that for everydollar and every hour, it's
either

jenny-gomes_1_05-29-2025_0 (17:26):
come back.
You don't have to do that again.
And

_1_05-29-2025_102613 (17:29):
perennial and perennial back.
You don't have to do that again.

jenny-gomes_1_05-29-2025_0 (17:31):
like

_1_05-29-2025_102613 (17:32):
also means that wherever you plant that

jenny-gomes_1_05-29-2025_ (17:34):
where it's

_1_05-29-2025_102613 (17:34):
think

jenny-gomes_1_05-29-2025_0 (17:35):
you,

_1_05-29-2025_102613 (17:35):
you're probably not gonna move in.
This is where it's gonna live.
Just some of them aren't easy totransplant.

jenny-gomes_1_05-29-2025 (17:40):
space.

_1_05-29-2025_102613 (17:40):
Come back in that

jenny-gomes_1_05-29-2025_0 (17:41):
This

_1_05-29-2025_102613 (17:41):
space.

jenny-gomes_1_05-29-2025_ (17:42):
live?

_1_05-29-2025_102613 (17:42):
You wanna think through is this where it's
gonna live?

jenny-gomes_1_05-29-2025_09 (17:45):
the

_1_05-29-2025_102613 (17:45):
Pretty home.
It's like the home you buy, notthe home you rent,

jenny-gomes_1_05-29-2025_0 (17:48):
just keep

_1_05-29-2025_102613 (17:49):
right?

jenny-gomes_1_05-29-2025_092 (17:50):
So

_1_05-29-2025_102613 (17:51):
Yeah.

jenny-gomes_1_05-29-2025_0 (17:52):
tell us more.

_1_05-29-2025_102613 (17:53):
herbs are very tender and you wanna try
and keep as much of thosearomatic properties as possible.
So you're gonna dehydrate thisat 95 degrees Fahrenheit.
I do it low and slow and itprobably takes, I'm gonna check
it at like 12 hours just to seeWhat it's feeling like.
Dehydrated herbs are going tocrumble under your touch when

(18:16):
they're ready.
You don't want any moisturecontent really at all when
you're dehydrating.
So make sure that those, thoseleaves or stems or whatever
you're dehydrating are crumblingunder your touch.
That's really important.
And then you're gonna store inairtight containers on a cool,
dry place away from sunlight.
And you can crush or grind thembefore you use them, or you can

(18:39):
leave them whole.

jenny-gomes_1_05-29-2025_0926 (18:41):
I have a good friend down the road
who gave as a

_1_05-29-2025_102613 (18:44):
I have a.

jenny-gomes_1_05-29-2025_0926 (18:45):
A mason jar with dried mint and
dried chamomile mixed togetheras such a nice tea mix

_1_05-29-2025_102613 (18:51):
Together.

jenny-gomes_1_05-29-2025_09 (18:51):
for the wintertime,

_1_05-29-2025_102613 (18:52):
Such a nice,

jenny-gomes_1_05-29-2025_09 (18:53):
and I couldn't

_1_05-29-2025_102613 (18:54):
oh, that's lovely.

jenny-gomes_1_05-29-2025_09 (18:56):
how much better all

_1_05-29-2025_102613 (18:57):
I couldn't believe

jenny-gomes_1_05-29-2025_0 (18:58):
know what

_1_05-29-2025_102613 (18:58):
how much better all that smell than, like
I know what teabag but

jenny-gomes_1_05-29-2025_092 (19:02):
It

_1_05-29-2025_102613 (19:03):
there are not fresh.
Not even close.
Sure.

jenny-gomes_1_05-29-2025_092 (19:06):
It was just, it

_1_05-29-2025_102613 (19:06):
So good.
And you didn't have to use verymuch.
It was just, it was reallysweet.
It was

jenny-gomes_1_05-29- (19:11):
chamomile,

_1_05-29-2025_102613 (19:11):
very effective

jenny-gomes_1_05-29-2025_09 (19:12):
not difficult

_1_05-29-2025_102613 (19:13):
to drive.
So like mint, amo mill, that'snot exotic.
That's not difficult to grow.
Those are pretty easy things to,

jenny-gomes_1_05-29-2025 (19:18):
really nice

_1_05-29-2025_102613 (19:19):
yeah.
To grow and expensive.
And it

jenny-gomes_1_05-29-2025_09 (19:20):
the wintertime

_1_05-29-2025_102613 (19:21):
was really nice because you Yeah,
absolutely.
And one thing I would say as aseed saver is that I like my
annuals to go to seed in thefall.
And then when they go to seed, you can actually either harvest
those seeds or just sprinkle'emback in the ground.
And in the spring they will comeup and you just repeat that

(19:42):
cycle over and it just keepscoming up.
I don't know if you've everplanted dill, but dill is a
very, I don't wanna saypromiscuous seed.
Seedy plant, but I find what,it's so fertile.
If you have a dill going to seedin your garden, you're gonna get
dill coming back up the nextspring because it's so prolific

jenny-gomes_1_05-29-2025_0 (20:05):
It's spreading

_1_05-29-2025_102613 (20:05):
it

jenny-gomes_1_05-29-202 (20:06):
hither, and yawn.
Have you ever heard any personsay that?
I've heard people

_1_05-29-2025_102613 (20:10):
you.

jenny-gomes_1_05-29-2025_09 (20:10):
and it makes me laugh every time
I've heard it, but Dill isspreading its seed, hither, and
yawn.

_1_05-29-2025_102613 (20:14):
The other thing I would love to share with
our listeners is that it's aperfect time to dehydrate your
chives, your green onions, yourgarlic scapes for me.
In one of my garden beds, Iforgot about some garlic that
didn't get separated out.
So this spring there's just abunch of garlic shoots coming up

(20:35):
and I'm gonna take those cut thetops off and dehydrate those.
And then I'll make a powder withfresh garlic and onion tops and
green chives and things likethat.
And I think that's a reallygreat way to.
I don't know, have your ownspecial blend of herbs and
spices that came straight fromyou.

(20:57):
I absolutely love that story ofyour friend that gave you a very
personalized gift of mint andchamomile.

jenny-gomes_1_05-29-2025_092 (21:04):
It was super sweet and it was
actually very bittersweetbecause

_1_05-29-2025_102613 (21:07):
It was.
It was

jenny-gomes_1_05-29-2025_0 (21:08):
was,

_1_05-29-2025_102613 (21:08):
actually

jenny-gomes_1_05-29-2025_09 (21:08):
she was moving, it was kinda a long

_1_05-29-2025_102613 (21:09):
bitter.

jenny-gomes_1_05-29-2025_09 (21:10):
she was like, I'm gonna, I'm
leaving.
Here's my parting gift.
And I was like, man, I should begiving you the parting gift.
But it was just very sweet and.
That wasn't

_1_05-29-2025_102613 (21:18):
But it was just very sweet

jenny-gomes_1_05-29-2025_ (21:19):
super difficult,

_1_05-29-2025_102613 (21:20):
that wasn't a ton of work.
It wasn't super difficult,

jenny-gomes_1_05-29-2025_0 (21:23):
very

_1_05-29-2025_102613 (21:24):
but it was very good very easy to enjoy.
Enjoy in the wintertime.

jenny-gomes_1_05-29-2025_0926 (21:30):
I also think having herbs
available makes you a

_1_05-29-2025_102613 (21:33):
Herb

jenny-gomes_1_05-29-2025_092 (21:34):
It makes your

_1_05-29-2025_102613 (21:34):
makes you a better cook.

jenny-gomes_1_05-29-2025_09 (21:35):
and

_1_05-29-2025_102613 (21:36):
Better cook.

jenny-gomes_1_05-29-2025_09 (21:37):
you have them

_1_05-29-2025_102613 (21:39):
And as

jenny-gomes_1_05-29-2025_09 (21:39):
dry

_1_05-29-2025_102613 (21:40):
you have them

jenny-gomes_1_05-29-2025_092 (21:41):
to

_1_05-29-2025_102613 (21:42):
and you

jenny-gomes_1_05-29-2025_ (21:43):
Which I

_1_05-29-2025_102613 (21:45):
use them,

jenny-gomes_1_05-29-2025_0 (21:45):
very

_1_05-29-2025_102613 (21:46):
which

jenny-gomes_1_05-2 (21:47):
preservation

_1_05-29-2025_102613 (21:48):
it's just like a very simple preservation
step that we might like, notthink of or not

jenny-gomes_1_05-29-2025 (21:54):
you're probably excited

_1_05-29-2025_10261 (21:55):
necessarily be, like, if you're tuning into
this podcast, you're probablyexcited to learn about can,

jenny-gomes_1_05-29-2025 (21:59):
freeze dry.
Ready

_1_05-29-2025_102613 (22:00):
pressure canning or.
You're like

jenny-gomes_1_05-29-2025_ (22:02):
skip,

_1_05-29-2025_102613 (22:02):
ready for step

jenny-gomes_1_05-29-2025_ (22:03):
sleep on the

_1_05-29-2025_102613 (22:04):
2.0, but

jenny-gomes_1_05-29-2025 (22:05):
super, super

_1_05-29-2025_102613 (22:06):
don't sleep on the dehydration because
it can be super, super valuableand easy.

jenny-gomes_1_05-29-2025_ (22:10):
Anna, how many

_1_05-29-2025_102613 (22:11):
And

jenny-gomes_1_05-29-2025_092 (22:11):
it running

_1_05-29-2025_102613 (22:11):
yeah.
We'll see, but I usually checkit after 12 hours.

jenny-gomes_1_05-29-2025_ (22:14):
Yeah, see, so like in the 11 to

_1_05-29-2025_102613 (22:17):
Yeah, so like

jenny-gomes_1_05-29-2025_09 (22:18):
you can

_1_05-29-2025_102613 (22:18):
anytime in the 11 to 14 hour range you can
check on it.

jenny-gomes_1_05-29-2025_092 (22:23):
so an herb Have preserved

_1_05-29-2025_102613 (22:26):
so an herb that I have

jenny-gomes_1_05-29-202 (22:27):
success

_1_05-29-2025_102613 (22:28):
preserved

jenny-gomes_1_05-29-2025_09 (22:29):
are hops.

_1_05-29-2025_102613 (22:30):
with great success,

jenny-gomes_1_05-29-2025_09 (22:31):
are a vine.
That is,

_1_05-29-2025_102613 (22:33):
oh.

jenny-gomes_1_05-29-2025_09 (22:34):
the

_1_05-29-2025_102613 (22:34):
Are a vine.
That

jenny-gomes_1_05-29-2025_092 (22:36):
in

_1_05-29-2025_102613 (22:37):
is the plants hop,

jenny-gomes_1_05-29-2025 (22:38):
strong

_1_05-29-2025_102613 (22:38):
are used in beard.
They actually have a very strongpreservative quality.

jenny-gomes_1_05-29-2025 (22:43):
Stands for

_1_05-29-2025_102613 (22:43):
you are a person who likes I-P-A-I-P-A
stands for

jenny-gomes_1_05-29-2025_09 (22:47):
has a lot of

_1_05-29-2025_102613 (22:48):
d and

jenny-gomes_1_05-29-2025_092 (22:49):
it because it was preserved

_1_05-29-2025_102613 (22:50):
has a lot of pop added to it because it
was preserved from WesternEurope for the long journey.

jenny-gomes_1_05-29-2025_09 (22:56):
lot of hot flavor.

_1_05-29-2025_102613 (22:57):
So they

jenny-gomes_1_05-29-2025_0 (22:58):
what that

_1_05-29-2025_102613 (22:59):
just have a lot of pot flavor.
That's that's what that herb is

jenny-gomes_1_05-29-2025_092 (23:02):
of

_1_05-29-2025_102613 (23:02):
probably most famous for.
Yeah.

jenny-gomes_1_05-29-2025_ (23:04):
which

_1_05-29-2025_102613 (23:04):
Also, I believe a coconut

jenny-gomes_1_05-29-2 (23:05):
mentioned because it

_1_05-29-2025_102613 (23:06):
plant,

jenny-gomes_1_05-29-2025_0 (23:06):
very

_1_05-29-2025_102613 (23:07):
which only I mentioned has, it has a very
gentle sedative, like sleepytimes

jenny-gomes_1_05-29-202 (23:12):
bitter,

_1_05-29-2025_102613 (23:13):
quality.
Oh,

jenny-gomes_1_05-29-2025_09 (23:14):
can dehydrate

_1_05-29-2025_102613 (23:15):
very

jenny-gomes_1_05-29-2025_0 (23:15):
They

_1_05-29-2025_102613 (23:15):
bitter,

jenny-gomes_1_05-29-2025_0926 (23:16):
a little pine

_1_05-29-2025_102613 (23:16):
but

jenny-gomes_1_05-29-2025 (23:17):
You've

_1_05-29-2025_102613 (23:17):
you can dehydrate those.
They look like a little fine.

jenny-gomes_1_05-29-2025_09 (23:20):
You could just look at an

_1_05-29-2025_102613 (23:20):
A label of any IPA

jenny-gomes_1_05-29-2025_09 (23:22):
but they're small.

_1_05-29-2025_102613 (23:23):
look at an illustration, right?
They look like a leafygreenstone, but they're small.

jenny-gomes_1_05-29-2025_0 (23:26):
it's

_1_05-29-2025_102613 (23:27):
can dehydrate those

jenny-gomes_1_05-29-2025 (23:28):
yellow

_1_05-29-2025_102613 (23:28):
easily, and it's the

jenny-gomes_1_05-29-202 (23:31):
pollen, but

_1_05-29-2025_102613 (23:31):
yellow kind,

jenny-gomes_1_05-29-2025 (23:32):
yellow substance up at the

_1_05-29-2025_102613 (23:33):
actually

jenny-gomes_1_05-29-2025_0 (23:34):
pine cone

_1_05-29-2025_102613 (23:35):
yellow.

jenny-gomes_1_05-29-2025_09 (23:36):
but that gets very dry and

_1_05-29-2025_102613 (23:37):
Pine C leaf,

jenny-gomes_1_05-29-2025 (23:38):
dried.

_1_05-29-2025_102613 (23:39):
that gets very dry and they're very pretty
dry,

jenny-gomes_1_05-29-2025_0926 (23:42):
a super

_1_05-29-2025_102613 (23:43):
very aromatic.
And that is actually a supersimple

jenny-gomes_1_05-29-2025_0 (23:46):
when you grow

_1_05-29-2025_102613 (23:47):
super simple dehydration herb.
And when you grow them, theirvines are very raspy, like a
raspberry.

jenny-gomes_1_05-29-2025_ (23:54):
climb

_1_05-29-2025_102613 (23:55):
If you needed something to climb a wall
or climb a,

jenny-gomes_1_05-29-2025_092 (23:58):
or

_1_05-29-2025_102613 (23:59):
sort of trellis or something, but you
didn't wanna attract

jenny-gomes_1_05-29-2025_092 (24:01):
or

_1_05-29-2025_102613 (24:02):
or produce like

jenny-gomes_1_05-29-202 (24:03):
they're really a

_1_05-29-2025_102613 (24:04):
lawn.

jenny-gomes_1_05-29-2025_0 (24:05):
that

_1_05-29-2025_102613 (24:05):
Tractor bear, they're

jenny-gomes_1_05-29-2025_09 (24:06):
see a whole

_1_05-29-2025_102613 (24:07):
really a neat line

jenny-gomes_1_05-29-2025_092 (24:08):
as

_1_05-29-2025_102613 (24:08):
you don't necessarily And what do you do?
You dehydrate it for the purposeof beer making or like, why
would you dehydrate it?

jenny-gomes_1_05-29-2025_092 (24:16):
So if I were just a person, just
not necessarily a

_1_05-29-2025_102613 (24:19):
So if I were just a person, just not
necessarily a home brewer,

jenny-gomes_1_05-29-2025_0926 (24:22):
a tea,

_1_05-29-2025_102613 (24:23):
would dehydrate a small amount for
adding to a tea.
Like one little of those.
He with

jenny-gomes_1_05-29-2025_0926 (24:28):
a Would

_1_05-29-2025_102613 (24:29):
let's say chamomile tea

jenny-gomes_1_05-29-2025 (24:30):
sleepy

_1_05-29-2025_102613 (24:31):
and a sugar cube would be a very good
sleepy time herbal blend.

jenny-gomes_1_05-29-2025_09 (24:36):
but

_1_05-29-2025_102613 (24:36):
You don't wanna do too much because it is
a fairly.

jenny-gomes_1_05-29-2025 (24:39):
sleepy

_1_05-29-2025_102613 (24:39):
it does have a

jenny-gomes_1_05-29-2025_0 (24:40):
feel

_1_05-29-2025_102613 (24:41):
distinct

jenny-gomes_1_05-29-2025_0 (24:42):
It's
